Shrimp Scampi I
3/4 cup (1 1/2 sticks) butter
1 pound uncooked shrimp, peeled, deveined
4 to 6 large garlic cloves, finely minced
1/4 cup white wine
2 tablespoons fresh lemon juice
3 tablespoons chopped fresh parsley
Salt and freshly ground pepper to taste
Additional lemon wedges for accompaniment
Freshly grated Parmesan cheese for accompaniment
12 ounces angel hair or linguine pasta, cooked according to package directions
Preheat oven to 400*F (205*C).
Place the butter in a 13 x 9 x 2-inch glass baking dish and place in oven until butter melts. Remove from oven and add the shrimp, garlic, wine and lemon juice to the melted butter, stirring to blend well. Return dish to oven and bake shrimp for 3 minutes; then mix in the parsley and bake until shrimp are just cooked through, about 2 minutes more. Season with salt and pepper.
Mound the hot cooked linguine in a large serving bowl. Spoon shrimp mixture over and toss gently to combine. Serve immediately with the Parmesan cheese for sprinkling and lemon wedges to squeeze on individual servings, as desired. Makes 4 servings.

PREPARATION:
Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side.

Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.
Makes 8 first-course servings.

Shrimp Scampi





1 1/2 pound jumbo shrimp, shelled and deveined
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
2 teaspoons minced garlic
1/4 cup dry white vermouth
1 tablespoon freshly squeezed lemon juice
2 teaspoons finely chopped flat-leaf parsley leaves
1/4 teaspoon grated lemon zest

Put the shrimp on a large pie pan or plate and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced.
Heat a large skillet over medium heat. Season the shrimp with salt and pepper. Add the butter to the skillet. When the foaming subsides, raise the heat to high, and invert the plate of shrimp over the pan so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, for 1 minute. Add the garlic and cook for 1 minute. Turn the shrimp over and cook for 2 minutes more. Transfer the shrimp to a bowl.
Return the skillet to the heat and pour in the vermouth and lemon juice. Boil the liquid until slightly thickened, about 30 seconds. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Stir the zest and parsley into the sauce. Pour the sauce over the shrimp, season with salt and pepper to taste and toss to combine.
Divide the shrimp among 4 plates or arrange on a platter and serve.

3/4 tsp grated lemon zest
2 tsp lemon juice
1 tbsp unsalted butter

1. In a large nonstick skillet, heat the oil over moderate heat. Add the garlic and saute for 1 minute or until soft.
Add the shrimp and salt, and saute for 3 minutes or until the shrimp are pink. With a slotted spoon, transfer the shrimp to a plate.

2. Add the vermouth to the pan and cook for 1 minute. Stir in the cornstarch mixture and cook, stirring, for 1 minute. Return the shrimp to the pan and stir in the parsley, lemon zest, lemon juice, and butter. Serves 4.

From what I remember, Shrimp Scampi is just cooking the shrimp in butter and garlic (kinda like saute) and serve.

SHRIMP SCAMPI

24 lg. uncooked shrimp (peeled, deveined, leaving tails on)
4 lg. garlic cloves, finely minced
1/2 stick butter
1/2 c. olive oil
1 c. white wine
1 tbsp. chopped parsley
Lemon wedges
bread crumbs

In a skillet, saute a few spoons of bread crumbs, parsley and garlic until lightly browned. (Add garlic after a few moments so that it doesn't get brown.)
Add shrimp, marinade and juice from a couple of lemon wedges and cook until shrimp are pink (a few minutes) and juices in pan are bubbling hot.

Serve shrimp with scampi sauce for dipping, and garnish with lemon wedges.

Saute some shrimp in butter with some crushed garlic, a dash of lemon juice & pepper.
Serve like this or serve over pasta. Top off right before serving with some Parmesan Cheese.

For different variations : add some chopped onion, red, green or yellow peppers, leeks, zuchini, asparagus, or what ever you desire!!
