Crock Pot Chicken Ratatouille
This low fat crock pot recipe is so easy - just throw it all in the pot.
Servings: 8 - 1 1/2 cup servings
• 4 boneless skinless chicken breast halves, cut into 1 inch cubes
• 1 - 26 ounce jar prepared spaghetti sauce
• 1 medium eggplant, peeled and chopped
• 2 medium tomatoes, chopped
• 2 small zucchini, sliced
• 1 medium green bell pepper, cut in 1 inch chunks
• 1 large onion, chopped
• 3 cloves garlic, minced
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1/2 teaspoon salt
Combine all ingredients in a 3 1/2 or 4 quart crock pot. Mix well. Cover and cook on the low setting for 6 to 8 hours.

Invest in some red chili flakes and some bay leaves. 1/4 tsp of chili and one bay leaf with make a big difference to any stock. Even just one fresh tomato will add lots of flavour when slow cooking, because there is a lot of flavour in the skin. Alternatively use a squeeze of tomato puree. An ALTERNATIVE to salt is chinese five spice or severn spice or curry powder. Note that these contain their own salt. Kallo make stock cubes that are very low in salt so they are more suitable for use with curry powder etc. You can't ever go far wrong adding mixed herbs. If you add lots of dry spices it will add some bitterness so you will need a source of sweetness. Fresh vegetables such as tomatoes, peas, carrots and sweetcorn will add sweetness to a dish. Mustard seed (which will dissolve during cooking) can be used as an altenative or with chili. Wine or wine vinegar is another thing worth experimenting with. Cheap chicken is very tastless. Healthier alternatives are ... Lean lamb. (available from Sainsburys) Turkey (cheaper and full of flavour) Venison. (frozen venison is affordable and is cheaper than fresh lamb) Prawns ( try a bag of prawns, with a fresh chili, a stock cube, 1pt of water, a bay leaf, some mushrooms, some corriander and some green veg. Different varieties of chili have different tastes so experiment) Beans. There are wide variety or tinned beans available that can be used as a filler if you are little short on meat. Pork Loin Steaks - Provided you trim the fat off which is easy, this is an affordable moderately healthy red meat if you are on a budget. Frozen fish. - Another budget food are blocks of frozen fish. Coley is the cheapest but it needs the most help. A roll or to a frozen chopped spinach is another useful addition to a stock. It is also a useful source of iron that you may not be getting enough of if you are living on chicken. =================== A soup is a lazy persons cooking sauce, so if you fancy cheating just add a packet soup to you meat, with some water and voila you have a meal. If you like it, look at the soup ingredients and it will give you some ideas.

Place four boneless skinless breasts in crock pot. Sprinkle with paprika. Add one can of Cream Of
Chicken soup. Don't add water. Add sliced onions
and red bell peppers. Cook on low for two hours
Serve with white rice or egg noodles with broccoli.
You can do the exact same recipe with a London Broil

There are some good slow cooker or crockpot recipes here. You should be able to find some for chicken.

If you buy the healthy request soup this recipe will be low in fat and the sodium will be cut. You need your chicken breasts...one can of condensed cream of mushroom soup...one pkg. of Lipton or Knorr onion soup mix. Place your chicken in the crock along with any veggie under the sun...top with the soup and soup mix. Spread evenly and let the pot do the work. Its very simple, very tasty, and relatively healthy.

Slow-Cooker Chicken Tortilla Soup

"This tortilla soup tastes better than anything you can get at a restaurant. And it's healthy too! Don't let the long list of ingredients fool you. All you do is dump everything into the slow cooker and walk away. Garnish with grated Cheddar, avocadoes, and a splash of fresh lime juice."

INGREDIENTS
1 pound shredded, cooked chicken
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil
DIRECTIONS
Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
Preheat oven to 400 degrees F (200 degrees C).
Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.


Cuban-Style Slow-Cooker Chicken Fricassee

"This is a typical Cuban dish. It's easy to make and quite tasty. This goes best over white rice and some fried plantains."

INGREDIENTS
1 large onion, chopped
6 cloves garlic, chopped
1/2 green bell pepper, chopped
8 small whole peeled potatoes
1 (8 ounce) can tomato sauce
1/2 cup dry white wine
1/2 tablespoon cumin
1 leaf fresh sage
salt and pepper to taste
2 pounds chicken leg quarters
DIRECTIONS
In a medium bowl, combine onion, garlic, bell pepper, and potatoes. Stir in tomato sauce and wine; season with cumin, sage leaf, and salt and pepper. Place chicken legs in slow cooker, and pour mixture over chicken. Cover, and cook on Low heat until juices run clear, about 6 to 8 hours.

i make great chicken caricature put breast in crock add a 2 cups of red wine 2 cans of tomatoes crushed kitchen ready i/2can of water onions peppers mushrooms garlic salt pepper basil oregano i serve it over pasta or rice
