i had this salad in france with a family and i really need to find the exact recipe. please help

I have these two recipes, hope can help you........

***#1 Moroccan Couscous ( Simple & Easy )

Bring 11/4 cups water, 1 cup chicken broth, 1tbsp. vegetable oil, 11/2 tsp. grated lemon zest, and 1/2 tsp. salt to a boil. Add 10-oz. box couscous, remove from heat, cover, and let stand 5 minutes. Fluff the couscous with a fork; add 19-oz. can rinsed canned chickpeas and 1 cup raisins. toss. Serves 4.

***#2 Moroccan Chicken Couscous

The couscous in this Moroccan national dish absorbs all the flavour of the chicken, vegetable, herbs and aromatic spices but still remains beautifully light.
Although couscous looks like a grain, it is actually a form of Moroccan pasta made from durum wheat. It is cooked by steaming it over a stew or broth. It can be bough from most health food shops and large supermarkets. Buy the precooked variety for this recipe to save time. Moroccan cooks often serve the cooking liquid from their couscous dishes separately - usually in two jugs with one containing spicy flavourings, such as harissa. If harissa sauce is difficult to find, you can add some extra ground cumin and coriander to ane jug for variety.

4-6 chicken quarters
4oz (115g) tin chickpeas
1 large Spanish onion
4 medium carrots
4 small turnips or 2 medium swedes
2 potatoes
2 courgettes
4 tbsp virgin olive oil
1lb (450g) precooked couscous
1/2 tsp ground cinnamon
3-4 drops orange-flower water (optional)
2 tbsp seedless raisins
Salt and freshly ground black pepper
Fresh coriander leaves for garnish

Spicy Paste
2 tbsp tomato puree
2 cloves garlic
1 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
3/4 tsp cayenne

Drain and rinse the chicpeas, place them in a large casserole and cover with cold water. Bring to the boil, then drain and rinse under cold water.

Skin the chicken quarters and cut theminto large, bite-sized pieces. Peel and thinly slice the onion, scrape the carrots and cut them into thick rounds. Peel the turnips or swedes and the potatoes and cut them into large chunks. Top and tail the courgettes and slice thinly. Mix the ingredients for the spicy paste together in a small bowl.

Heat 2 tbsp of oil in a large flameproof casserole. Add the onion and cook gently for 10 minutes, stirring frequently, until softened. Add the spicy paste and mix well, then the chickpeas, and cover and simmer for 1 hour. Place the chicken into the casserole and cover with more cold water. Bring to the boil, lower the heat, cover the pan and simmer for 30 minutes, stirring occasionally.

Meanwhile, place the couscous in a bowl, add a pinch of salt and cover with boiling water. Leave to stand, stirring occasionally, until all the water has been absorbed. Stir in the remaining oil, cinnamon and optional orange-flower water.

Add all the vegetables except the courgettes to the stew and stir well. To steam the couscous, put it in a large colander, place on top of the stew and cover tightly with a lid or with foil. Cook over a moderate heat for about 30 minutes, until the steam starts to rise through the couscous. Add the courgettes and the raisins to the stew 15 minutes before the end of the cooking time and season to taste.

To serve, pile the couscous on a wide, flat, serving dish. Remove the chicken, chickpeas and vegetables from the cooking liquid with a slotted spoon and arrange over the couscous and moisten with a few spoonfuls of cooking liquid. Garnish with coriander. Serve the remaining liquid separately.

i have a great couscous salad recipe.. but i don't think it's what ur looking for so i kind of created a recipe 4 u.. so here u go.. hope this helps:
cover 1/2 cup couscous in water (just to cover.. not too much) let it soak all the water.. add 2 medium chopped tomatoes, 1/4 cup raisins, 1/4 cup black olives, 2 tbs. chopped mint.. add some salt, pepper, lemon juice to taste...
P.S. : if this doesn't work 4 u add or reduce the ingredients to get to the desired taste..

Cous Cous is a neutral in the cooking world and can be made savory or sweet (like rice only faster) - you have all the ingredients you need listed here except there would be no vinegar use the preserved Myers (Persian) lemons and the juice will create the luscious sauce that mimics a rich white balsamic vinegar. The basic serving for 4 requires about 1/4c of dried ingredients, 1 cup of fresh and herbs like mint should be rolled and sliced to create about 1 tablespoon in total. Hope this helps!
