It's been years since I had smelts and just came across some in the grocery store that are now defrosting in my fridge.

From what I remember...you cut the head off below the gills, remove the fin and slit the underside of the belly and remove the guts????
Am I missing anything?

I was planning on tossing them in flour and a little salt and fast frying in peanut oil.

You didn't miss a thing. Nothing like a good snack of smelts. That's the best way to cook them, make sure your oil is hot enough before putting them in the pan...don't overcook them.

well zinc smelting produces by products such as cadmium, silver, and sulfur dioxide which may turn into sulfuric acid. none of these products are radioactive, thats good. cadmium is not harmful i think, it is utilized in paints and plastics..., plus it would be easy to clean the only problem would be sulfur dioxide and sulfuric acid, but over a period of 28 years, it would probably naturally dissipated. conclusively, the clean up should have been enough to make it safe. plus labs are kept clean, not like chemicals are left to spew out everywhere, you should be more concerned about kids going into the actual mines.

Sometimes I use a corn meal/flour blend when frying my "freshwater" smelts.

yes, you are correct.....
I would only add:
"rinse under cool water after cleaning.".....
but I thought smelts come already cleaned
now-a-days?
I love smelts.
I can eat "tons" at one sitting.
