butterflys are too small to grill properly, try this:
strip the wings, legs and heads off about a dozen butterflys and mash the bodies into a paste add ground cumin, oregano and sage with about a table spoon of tomato puree and cook for about 20 mins in 1tsp of red wine
boil 2 cups of rice until thouroghly cooked through
drain and decant onto serving plates
serve the butterfly mixture in a depression in the center of the rice
and garnish with a pair of butterfly wing that you removed eairlier
serves two
the type of butterfly doesent matter but wichever you find prettier the better the garnish.

a honey and nectar dressing usually works, especially when the grilled butterfly is lovingly and lightly spread over a puree of brightly coloured caterpillars and moths. Of course, one should always drink the very best wine with this to bring out the flavour of the butterfly wings .... truly they have a delicate aroma and taste that is beyond compare.

Butterflies tend to be pretty dry, and bits of the wings get stuck in your teeth. I prefer fat, juicy caterpillars skewered and basted with butter, lemon and pepper and grilled off to the side over low heat. These are great with heavily salted and grilled banana slugs.

Something light, they tend to lose their flavour in anything strong like curry etc.
