Fresh warm applesauce, mashed potatoes and braised cabbage are classic pork accompaniments.

BRAISED RED CABBAGE

1/4 cup (1/2 stick) butter
1 2-pound head of red cabbage, quartered, cored, very thinly sliced (about 14 cups)
1/2 teaspoon (or more) salt
3 tablespoons dry red wine or hard cider
1 tablespoon red wine vinegar or apple cider vinegar



Melt butter in heavy large pot over medium heat. Add sliced cabbage and 1/2 teaspoon salt; stir and toss constantly until cabbage begins to wilt, about 7 minutes. Add red wine or hard cider and sauté until liquid evaporates, about 10 minutes. Add red wine vinegar or apple cider vinegar; stir constantly until cabbage is tender and turns bright fuchsia color, about 13 minutes longer. Season to taste with pepper and more salt, if desired. (Can be prepared 1 day ahead. Cool slightly. Cover and refrigerate. Rewarm, stirring over medium heat, before serving.)

Makes 8 servings

For applesauce
3 lb mixed McIntosh and Gala apples
1/4 cup water
3 tablespoons sugar
1 tablespoon cider vinegar
1 Turkish or 1/2 California bay leaf
1/4 teaspoon ground allspice

Peel, core, and coarsely chop apples, then stir together with remaining applesauce ingredients in a 3-quart heavy saucepan. Bring to a simmer, stirring occasionally, then reduce heat to moderately low and cook, covered, stirring occasionally, until apples are falling apart, 15 to 20 minutes. Discard bay leaf and mash apples with a fork. Keep applesauce warm, covered

Rice Pilaf would be very good as well as twice baked potatoes or a Tomato wedge, fresh Basil, Green Bell Pepper strips and Red Onion (slice into 2, 1/4" slices and separate rings using all the rings except the outer 2-3 ) Salad with Italian dressing or Cranberry or Lemon Vinaigrette!

scalloped potatoes
1/4 cup chopped onion
1/4 cup butter or margarine
1/4 cup all-purpose flour
2 1/2 cups milk
5 large potatoes, peeled and thinly sliced (5 cups)

Preheat oven 350
To make sauce, cook onion in butter or margarine till tender but not brown. Stir in flour, 1 1/2 teaspoons salt, and 1/8 teaspoon pepper. Add milk. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Remove from heat. Place half of the sliced potatoes in a greased 2-quart casserole. Cover with half of the sauce. Repeat layers. Bake, covered, in a 350 oven 45 minutes, stirring once. Uncover; bake about 30 minutes more or till potatoes are done. Makes 4 to 6 servings.

There are a lot of great ideas here!

I would roast some apples and potatoes along with the pork.
The apples get to be very soft and have a nice sweet flavour with out being as sweet as many applesauces.
Roasted small potatoes are wonderful!
I always like to serve a green salad too. (Green leaf lettuce, candied walnuts, dried cranberries and a raspberry vinaigrette - my favourite salad.)

Anything green like cabbage or broccoli. Roasted potatoes (walmart has a seasoning less than a buck that creates a delicious recipe) and Zatarans brand has various rice dishes like pilaf rice, if you follow the microwave directions, you get perfect rice and it saves you time to prepare other items. I've done it for years and its so easy.

Herbed Rice Pilaf

TOMATO MOZZARELLA CASSEROLE:
1 1/4 cups packaged Onion and Garlic Croutons
3 medium ripe tomatoes, sliced 1/4 inch thick
6 ounces shredded mozzarella cheese
1 Tablespoon dried oregano
1 Tablespoon dried basil leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
salt and pepper to taste
3 to 4 Tablespoons bottled Italian OR Vinaigrette Dressing
Scatter croutons over bottom of a 10" glass pie dish. Overlap with tomatoes in a circular pattern to cover croutons. Sprinkle mozzarella cheese over tomatoes.
In a small bowl mix together oregano, basil, onion powder, garlic powder, salt and pepper. Sprinkle herbs and seasoning mixture over cheese.
Microwave, uncovered, on HIGH for 3 1/2 to 4 1/2 minutes or until cheese is melted.
Remove and spoon dressing over top. Poke holes to let dressing drain to croutons. Let stand for 5 minutes for flavors to develop. Serve.

Sounds good! We like those flavored pork loins at our house too, very quick, easy and tasty. I would serve a big salad and some good fresh bread with it. Or if you want real speed and convenience, there are many different packaged rice mixes available, plus frozen mixed veggies in a cheese sauce.
