Blueberry Pancakes


Ingredients

plain wholemeal flour
soya milk
vegan margarine
blueberries
soya yogurt



For the pancake mix, I never measure my ingredients but judge by the consistancy of the mixture. If I want thin crisp pancakes I make a runnier mixture and for thicker stogier pancakes I use more flour. I usually make less mix than I need in case we don't eat as many as I anticipated, but if you have some left over it will keep in the fridge for as long as the milk will stay fresh.

Start by melting a knob of margarine in a frying pan. Mix soya milk and the flour together in a jug with a fork until you have the desired consistancy. If it is lumpy you can use a hand mixer to smooth it out.

Pour some mixture into the pan. For thin pancakes barely cover the bottom of the pan, but for thicker ones pour in a more generous amount. Cook on a medium heat as you don't want them to burn. Use a spatula to gently turn the bottom of the pancake to check how it is cooking. If it is going brown but there is still a lot of liquid mixture on the top turn the heat down a bit. Once the pancake is solid enough flip over gently using the spatula and cook the other side. I have never been able to toss these as they don't have the same consitancy as regular pancakes.

Once the other side is cooked as well turn out of the pan and fill one side with soya yogurt and blueberries. Flip the other side over and then enjoy.

Oatmeal Chocolate Chip Pancakes
A tasty egg and dairy free pancake recipe! Top with organic maple syrup or ghee, or serve with warm applesauce. You can also omit the chocolate chips and add 1/4 cup hydrated raisins, 1/8 cup applesauce and cinnamon to taste."

INGREDIENTS
60 g rolled oats
90 g pastry flour
7 g baking powder
2 g baking soda
3 g sea salt
40 g ground flax seeds
40 g vegan carob chips
355 ml soy milk

DIRECTIONS
Preheat a lightly oiled griddle over medium heat.
In a medium bowl, mix rolled oats, pastry flour, baking powder, baking soda, sea salt, flax seeds, and chocolate chips. Gradually blend in soy milk.
Pour batter about 1/4 cup at a time onto the prepared griddle. Cook 1 to 2 minutes, until bubbly. Flip, and continue cooking until lightly browned.

or Milk-free, Egg-free Pancakes
2 cups flour
4 tsp. baking powder
1/4 tsp. salt
2 Tbsp sugar
2 cups water
3 Tbsp oil
1/4 tsp vanilla

Mix all the ingredients, using a whisk so that you can get all the lumps out and then spoon out the batter, and cook like you would regular pancakes

OR For savoury pancakes or deep frying combine soya flour, wholemeal flour, vegetable oil, soya milk, baking powder and salt. For sweet pancakes, omit the salt and baking powder. Use as normal battter (will keep for 1-2 days in fridge).

It's a long time since I've made any, but I used to mix in some gram flour along with the flour instead of using egg. Worked fine.

Alternatively, try looking for recipes for dossa in Indian cook books. I think they tend to use lentil flour, so the common theme seems to be add some ground up pulses.

I was at a wine tasting recently and they stated to replace any milk, water, or eggs with flavored champange - apparently it makes them really light and fluffy. The flavor of this champange was blueberry from Renault Winery, Egg Harbor NJ

pancake mix - just add water, theyre pretty good too and you can add blueberries chocolate chips or anything your little heart desires!

Duh, pancake mix has an egg derivitive in it, and therefore no good for those with allergies!!
