I've tried to search the iTunes store and cut and pasted into the library when I wanted to add the accents/symbols to the songs I got them from a friend's homemade CD.

I'm assuming you're using Windows? If so, read on.

I would recommend using the Windows Character Map. In Windows XP, goto:-

Start
All Programs
Accessories
System Tools

Then Select the Character Map. This brings up an on screen console showing all of the different letters, accents and symbols etc. You click on the one you want, click the copy button and it is there on the Windows clip board. You can then paste (right mouse click paste of select ctrl+v on the keyboard) this in to the required application. I have just tried it in iTunes and can confirm this method does work.
