because caviar is the roe, or eggs from a stureon. Just like if there weren't any hens, there wouldn't be any eggs

I am a former chef and knowing the bases of the problem has been for years a two fold issue, first there has been problems in both the Russian and Iranian arwas of the Black Sea, were most of the fish are taken and the caviar produced, pollution and overfishing has been the biggest problem, second, with the eggs coming from female fish the amount of female sturgeon has decreased 80% over the last 20 years.

In the US in both Washington and New York they have started farming the sturgeons and when taking the fish to extract the egg, they will not kill the fish, instead they are now making a small cut extracting the eggs and then like a human sewing the wound back up, but with a fish taking 3-8 years to reach mature weigh and produce enough egg for production, but with the other varietys available likw salmon, lumpfish or paddlefish from Idaho, there alway will be some type available.

Here in Canada they have started producing some from Lake Whitefish, it is a golden colour, not as fishy and is smaller, the best thing would be to allow stocks like the Atlantic cod to come back.

Maybe sturgeon comes from the source of caviar. The sea might lose the popultion of sturgeon causing no more caviar.
