Humping is not about sex, unless the penis is erect. Its about dominance. If you don't allow him to be dominant and YOU are a good leader, he shouldn't do it. Where is this head rest exactly? In the car? How does he read it? Are you in the seat? He could be trying to dominate you.
Watch the Dog Whisperer, or read his book Caesar's Way for ways to be a good leader and have a good dog.

You need to spray some sort scent on it, maybe pepper spray but I know to keep cats out of certain areas of a house you spary the cats urine in that area to show the cat its already his territory and he doesnt need to do go there anymore.
