Use bramley apples. They cook well, but you need to add a bit of sugar to sweeten them.

Snickerdoo... knows their apples, those are the ones I would have listed.

My personal preference is Granny Smith. You want a firm fleshed apple that won't turn to mush when you cook it, you want a fairly tart apple so you get that applie pie 'zip'. Granny Smiths are firm and fairly tart and are also very easy to find.

I've cooked with just about every apple variety that exists as I live in a major apple growing area with lots of organic and micro farms as well as backyard and commercial orchards.

Your best bet for success, especially if you're a newbie to pie making is Granny Smith.

Now the perfect crust, that's a whole other story...

Excellent varieties for baking are Cameo, Cortland, Golden Delicious, Granny Smith, Jonagold, Jonathan, and Rome apples.

Braeburn, Empire, Fuji, Gala, Ginger Gold, HoneyCrisp, Newton Pippin, and Pink Lady apples will also work.

NOTHING beats Granny Smith apples for a great American pie! And of course, before serving, top each slice with a piece of cheddar and broil just till melted.

I read the list from others. I use MacIntosh apples most of the time, but sometimes I just use whatever I have in order to clear out my refrigerator bin, and they all work .
