Gourmet grilled cheese

Combine mayonnaise chives and mustard. Mix well and sprinkle with a little cayenne pepper; if desired. Spread one side of each bread slice with mayonnaise mixture Divide cheddar cheese among 4 bread slices.(Shaved ham could also be added here.); Top cheese with remaining bread mayonnaise side down. Melt butter in heavy large skillet or griddle. Grill sandwiches on each Side until golden and cheese melts.

I don't know.But I can give you a recipe for grill-provolone.Get a chunk of provolone cheese ( one inch thick) put the cheese in the grill ( mediion heat) then add some oregano.As soon as the cheese get a little soft flipped over.Do the same with other side.I think the whole process might take no more than ten minutes.

INGREDIENTS
1 (3 ounce) package cream cheese
3/4 cup mayonnaise
8 ounces shredded Colby-Monterey Jack cheese
3/4 teaspoon garlic salt
8 slices French bread
2 tablespoons butter
DIRECTIONS
In a medium bowl, combine cream cheese, mayonnaise, shredded cheese and garlic salt. Beat until smooth.
Preheat a large skillet over medium heat. Spread cheese mixture on 4 slices of bread, then top with the other 4 bread slices. Lightly butter both sides of each sandwich. Place sandwiches in skillet, and grill until golden brown on both sides, about 4 minutes per side.

Most cheese sandwiches are made with American cheese. Be brave and try other cheeses. Fresh mozzarella and asiago are both good but try anything you want. I made some sandwiches the other day with the 5 cheese mexican blend with fresh fried bacon strips. Remember the joy of cooking is being experimental and trying whatever you think sounds good. If it doesn't work out just throw it out and try something else.
