Red hair looks nice.
Plus, redheads (the natural variety) tend to have naturally paler skin. And pale flesh just looks smoother, more crisp, more... yummy?
Is that a good answer? Heh. I won't make any generalisations about personality - I don't honestly believe hair colour changes a person's personality. :P
Also, a redheaded friend of mine is now telling me I have to say the following:
"Redheads have the brains of a brunette and the fun of a blonde."

I think what's most appealing is the exotic factor. Let's face it, there are not as many redheads out there compared to everyone else. So like anything we're not used to, we either hate/fear it, or find it intriguing (thank you spell check).
I think that's why you usually hear people say they "Love it" or "Hate it".
I personally dated a redhead, and she was definitely the most feisty, and energetic.

I think a lot of people associated Red heads with a "fiery" attitude, which can be sort of attractive. My sister is a redhead and used to fight a lot so I have mixed feelings. hah! But i think it's the association with the color red more than anything

I have always loved Redheads. I think has to do with the perception that they are wilder than blondes and brunettes.

I liked one red head chick called sally years ago, because she had a really well formed bum and it was pure white - man dead sexy. She also had red pubes and that was weird but you get past that. It's been my experience that red heads use initiative and often make the first move, again that is dead sexy. You go girl.

I'm not sure why I like them but I do, especially when they have a few dark freckles. It's just unique, I guess.
