Everyone is responding with reference to taste and smell but no one has mentioned the fact that the oil becomes a carcinogen after being heated several times. We thoroughly strain ours in cheesecloth, keep it refrigerated and use it no more than 3-4 times.

Health experts actually suggest that you shouldn't use oil more than once but that gets a little expensive.

All of the answers are pretty good
But to say after X uses or X hours is hard because it depends on the type of oil (each type breaks down at different rates/heats) and what you have cooked in it (different foods will give off different flavors in the oil)
and how much time between uses and how it is stored. (oil goes rancid)

Go by smell, color and smoking (and if you have used it for anything (like fish) that may strongly flavor the oil. You would not want to fry doughnuts after fish no matter even if it has only the one other use.

I work in resturants and change 2 times a week (20hrs useage)
if you drag a seive through your oil after each use this prolongs the life,
Also when the oil is new, the first thing you should do is throw in 1/2 an onion, skin and flesh let it cook, remove and this will ad a bit of taste to the oil

The oil begins to take on a dark color. This means it is burning each time you fry anything in it. You will notice a different taste on your food as well. Replace it very 2-3 months or so, depending on how much you deep fry.

hey there i know exactly wht 2 do when your deep fat fryer goes a mouldy colour and you think it looks discusting then change it.xx

1.if the oil has bits in it.
2.if it has changed colour.
3.if your doing chips and have previuosly cooked sasauge.
or every time you use it.
