Since you specified "Canon," I will stick to Canon. I think there aere two directions to go here and the 400D is NOT one of them. It's a great camera, but in a price-doesn't-matter comarison, it just doesn't cut it.
I say there are two ways to go, because it depends on how big a camera you want to work with. If the thought of swinging five pounds of camera and lens doesn't bother you or if you will be using a tripod in a studio, look at the Canon EOS-1Ds Mark II. (This might be upgraded soon, though, so either wait for the new model or close-out prices on this one.) This is the ultimate workhorse with amazing resloution. I won't go on and on about it, but you can read the review.

If you want a camera you can actually handle in the field - at half the weight and half the price - consider the Canon EOS 5D. It's an amazing camera.

The XSi is a great beginner camera. It has several automatic modes. You can use these while learning to use the manual settings. Don't think that just because you get an SLR your photographs are going to be professional looking. You will need to learn how to use it. I suggest that you sign up for a class when you buy the camera. Knowing how to use your camera and knowing the basics of photography will improve your photos. The camera you use wont. Blurry pictures are caused by camera shake or to slow of a shutter speed. For action shots you will need a shutter speed of at least 1/250th of a second. Anything below 1/60th of a second and you can't hand hold the camera steady enough not to get blurry shots. Shutter lag will not be an issue with any SLR so you wont have this problem.

Alan is right. The top Canons are the 1D Mk II or the 5D. Those will go for several thousand dollars each (body only). A lot of top wedding photogs are using the 5D and by top photogs I mean guys that get $10K-20K per event. They often use a Canon 30D as a back up. The Canon XTi is a sizeable step down from the 30D and would be regarded of as a "prosumer" camera, not a professional camera.

You can't go wrong with top of the line Nikon or Canon. I am most familiar with the Nikon line so I can tell you about that one. The D50, D70, and D80 are all great. The D200 is unbelievable. There is nothing you can't do with it. The Nikon accessories (o-camera flashes and remote flashes) and the Nikon lenses (fixed, zoom, and anti-vibration) give you a lot of professional quality to go with that.

If price is truly not an object take a look at the Nikon D2Xs.
High quality imaging 12.4 mp and fast shooting of up to 5 frames/sec. In addition Nikon's high end lens offer some of the best optics in photography in addition to the breadth of specialty lens available.
I own Nikon and have sold Nikon.

The Canon 400d TXi is a very good professional camera. Also if you wish to look at Nikon D2HS is also a very good camera if expense is no problem.
Both are very good cameras with good reputations.

Pick any Nikon or Cannon D-SLR you fancy! Dont forget to spend more on the gear that goes with it, flash, brollys, lens etc. Sigma and Tameron are good!
