1 tb Oil
1 Egg, slightly beaten
2 tb Oil
1 c Chicken, finely diced
1 md Onion, finely diced
1/2 c Water chestnuts, finely diced
1/2 c Bamboo shoots, finely diced
1/2 c Celery, finely diced
1 c Fresh bean sprouts
1/2 c Frozen peas (opt)
1/2 c Sliced mushrooms (opt)
4 c Cooked rice
Soy sauce
Salt
Pepper
Cut up and prepare all ingredients. Reserve. Heat wok up with 1 tablespoon oil and fry egg into a thin sheet. Remove to plate and reserve.. Add 2 tablespoons more oil to wok. Heat until smoking. Stir fry chicken and onion together until cooked. (If leftover meat is used, just heat through.) Add bean sprouts, peas, celery. Stir and cook 2 minutes with wok covered. Uncover wok, add all the rest of the vegetables. Stir fry and cook covered for 2 additional minutes. Add cooked rice, season with salt, pepper, soy sauce. Reduce heat to medium. Take your turner and break up clumps of rice as finely as possible. Make sure rice takes up soy sauce and does not remain white. Keep stir-frying until all rice is broken up and heated through. Shut heat off. Cut up sheet of egg into small pieces and stir into rice, or remove rice to serving platter and garnish with egg slivers.

use cooked rice that is dry, not wet and sticky (traditionally white rice but you can use healthier brown rice) that has been cooled, preferably refrigerated at least overnight,
put some oil (I use olive) - a glob or two in a fry pan or wok
add some finely chopped garlic clove to the oil (or some garlic powder to the veggies)
put some diced onion and a small amount of celery in and stir-fry for a few minutes - until they begin to soften a little
add some bean sprouts, stir-fry for another minute or 2
add any other chopped or diced veggie you like or want to add - carrots, peas, etc
add some bits of whatever cooked meat you like and if you like - beef, pork, chicken, shrimp (shrimp can be raw as it cooks almost instantly)
add some powdered ginger - a dash or more if you like, not too much
add a touch more oil if needed
add a raw egg and stir briskly with a fork - keep stirring until the egg is cooked and it is in little bits
now add as much of that cold rice as you want
add soy sauce to color and taste
add a dash of sugar
stir it all up and enjoy

If a fry pan is too modern DON'T read on!
One cup of rice
two cups of water
salt
soya sauce
pepper
garlic
oh oh?......stirring spoon?
put 1/4 cup of oil in fry pan
bring to hot heat...and uncooked rice...20 minutes...careful dont burn just brown the rice
add salt a pinch
pepper two pinches
garlicn three pinches
two table spoons soya sauce
stir
add two cups of water bring to boil
reduce heat to a simmer
cover
cook till rice is tender
ENJOY!!!!!!! p.s. when adding water to hot fry pan be very careful watch out for hot steam and splattering! seriously!
