I bought a huge piece of gammon at Christmas, which I boiled & was great. Had loads left which I thickly sliced & froze.

Any ideas (apart from soup), what I can use it for.

I had some left over gammon an tried the following yummie recipes

Pineapple and gammon kebabs with potato curry
For the potato curry
1 tbsp olive oil
1 clove garlic, finely chopped
½ red pepper, seeds removed and chopped
50g/1¾oz leek, white part only, finely chopped
½ potato, peeled and cut into cubes
1 tbsp medium curry powder
50ml/2fl oz white wine
100ml/3½fl oz double cream
For the gammon kebabs
150g/5½oz gammon, cubed
150g/5½oz fresh pineapple, cubed
1 tbsp olive oil
2 tbsp runny honey
salt and freshly ground black pepper

Method
1. Preheat the oven to 200C/400F/Gas 6.
2. To make the potato curry, heat the olive oil in a frying pan over a medium heat. Add the garlic, red pepper and leek and fry for 3-4 minutes, until softened.
3. Add the potato and cook for two minutes.
4. Add the curry powder and cook for another minute.
5. Add the white wine, bring to the boil and cook for one minute to cook off the alcohol.
6. Add the double cream. Heat to a gentle simmer and cook for five minutes, or until the potato has cooked through.
7. To make the kebabs, thread the gammon and pineapple cubes alternately onto two wooden skewers that have been soaked for ten minutes in water.
8. Heat the oil in a frying pan over high heat. Add the kebabs and fry for 2-3 minutes on each side, until browned and the gammon is completely cooked through.
9. Drizzle over the honey, remove from the heat and set aside to rest.
10. To serve, pour the curry into a warm bowl and carefully place the kebabs on top

or Gammon pie
Ingredients
2 tbsp olive oil
½ onion, peeled and chopped
170g/6oz gammon, diced
½ can of sweetcorn, drained
handful of green beans, chopped
2 tsp plain flour
1 tbsp fresh dill, chopped
1 tbsp wholegrain mustard
85ml/3fl oz white wine
85-110ml/3-4 oz double cream
85-110ml/3-4 oz milk
110g/4oz Red Leicester cheese
½ vegetable stock cube
¼ pack of puff pastry
1 egg yolk, beaten

Method
1. Preheat the oven to 220C/425F/Gas 7.
2. Heat the oil in a large pan and sauté the onion, garlic, gammon, sweetcorn and beans for three to four minutes.
3. Add the flour, dill, and mustard to the pan and heat for a further one to two minutes.
4. Pour in the wine, cream, milk, and cheese stirring continuously.
5. Crumble in the stock cube and simmer gently for eight to ten minutes.
6. Roll the puff pastry out to one to two centimetres thick, to line a serving plate. Use the plate as a template to cut around the pastry.
7. Dot the pastry with a knife and place on a baking sheet. Brush the pastry with the egg yolk to glaze.
8. Bake in the oven for five to six minutes, or until crisp and golden.
9. Transfer the gammon mixture to a plate or bowl.
10. Remove the pastry from the oven and use to top the gammon, to form a pie.
11. Serve.

or Red pepper and gammon risotto
Ingredients
25g/1oz butter
1/3 leek, diced
2 cloves of garlic, peeled and crushed
1/3 red pepper, diced
2 baby courgettes, diced
150g/5½oz rice
100ml/3½fl oz white wine
300ml/½pint vegetable stock
50g/1¾oz gammon, diced
50g/1¾oz fresh mixed herbs, chopped

Method
1. Preheat a large frying pan.
2. Melt the butter in the frying pan before adding the leeks and sautéing.
3. Add the garlic, pepper and courgette and continue to sauté.
4. Add the rice and stir well to coat the grains with butter.
5. Pour in the wine and a little stock. Stir well.
6. Add the diced gammon.
7. When the rice has absorbed the liquid, add a little more stock. Continue to add stock throughout cooking time (about 15 mins) as rice absorbs it.
8. Toss in herbs just before serving. Grate a little cheese on top if desired

or Spicy stir-fried gammon with chips
For the stir fry
1 tbsp olive oil
pinch dried chilli flakes
150g/5½oz gammon, thinly sliced
salt and freshly ground black pepper
1 tbsp honey
25ml/1fl oz red wine
For the chips
500ml/18fl oz vegetable oil
1 large potato, peeled, cut into very thin chips
salt
1 tbsp chopped fresh parsley

Method
1. For the stir fry, heat the oil in a wok. Add the chilli flakes and gammon slices and stir fry for three minutes. Season with salt and freshly ground black pepper.
2. Add the honey and red wine and cook for a further two minutes.
3. For the chips, heat the vegetable oil in a deep heavy-bottomed saucepan until a breadcrumb sizzles and turns brown dropped into it. (Caution: hot oil can be dangerous. Do not leave unattended.)
4. Add the chips to the hot oil and fry until crisp and golden. Carefully remove with a slotted spoon and drain on kitchen paper. Sprinkle with salt.
5. To serve, place the chips on a plate, place the gammon on top and sprinkle with parsley

I wouldn't risk anything which didn't involve cooking the stuff for at least half an hour. There's too great a chance of the bugglies breeding. Freezing doesn't kill 'em, it just stops 'em breeding. Only cooking will get rid of them.

Unless of course you want to lose a lot of weight really quickly, in which case cooked, frozen then thawed meat is an excellent idea.

I'm always really suspicious of cold meats. Had a week-long dose of jelly-botty as a result of some dodgy ham.

how about chopping up some with a mushroom sause( using soup is cheating but works great ) and mix with some pasta.

or supliment the gammon for mince and make a lasagne with it

Gammon and mushroom pie in a creamy sauce. I don't have a recipe, but if like me you make it up as you go along , you will surprise yourself. Trust me it's yummy. Good Luck. Who need recipes anyway?xx

Make up a nice tomato and chopped onion sauce sauce and mix it through warm spaghetti then stir in the chopped gammon pieces (I chop them quite small)

Serve with warm garlic bread............mmmmmmmmmmmmmmmmm

Egg and bacon pie.
Cut thin strips to add to a pizza.
Add bits to a white sauce and pour over cauliflower, top with cheese.
Same as above with macaroni.
Add to omelette.

You could use it in a pie with chicken and leeks.

use your imagination, instead of soup put it with beans in chunks, try it with eggs etc.
