it's not out of date.
Also is it ok to cook bolognaise and re heat it up later on today.
Its just that i'm going out to work and wanted to have food ready for my husband and the kids.Is it ok to use the microwave?

Fresh mince should be red. But you may have defrosted it in a warm room, thats why it has probably gone brown. Check the smell, that is a good indicator. Alot of people would have thrown this away. I came from a single parent family, and we did not have a lot of money, so could not waste food unless it was really necessary. We did cook brown coloured mince a few times. But as long as it does not smell offensive and you cook it thoroughly on a relatively high heat, and simmer on low for a while, it should be ok.
It should be ok to re-heat it in the microwave, as long as it is piping hot in the middle when it you take it out.
Having said all of this, please do not blame me if anyone develops a bad tummy. Its entirely up to you!

Cook it well enough and it'll be ok.
Make sure it's above 70°C for more than half an hour if you're at all unsure about it.

I always have bolognaise left over. Once it's cooled down, I just bag it into portions and bung it in the freezer for later. I've had 6 month old bolognaise from the freezer no trouble at all.

You defrosted it in the microwave? Probably OK. I have a thing against all these food hang-ups. If you live in a sterile environment how the hell are you going to develop anti-bodies? There is such a thing as being TOO clean.

What does it smell like? Most food can be tested with the nose test! If it smells ok, then it's probably ok to eat. With mince you have the extra safety of cooking or properly first, so you shouldn't have a problem.
Microwave is fine for reheating it.

im a chef so dont panic

when mince or meat is brown in colour it basically means that at some point before it was frozen that air got to it.

basically like if you stood out in the sun u get sunburnt.

it will still be fine to use as it is only the outside that is brown in colour

There'll be difference in flavor due to freezing and microwaving but it'll be negligable in a bolognaise. I'd say go for it.

It's oxydized, not spoiled, and may not taste quite as good but should be OK. If your sauce is refrigerated in the interim, your husband should be able to nuke with decent results.

Was the animal brown before it was slaughtered?.....if so.....
its ok.........


Usually of a sign that the raw non-frozen package of ground meat was older..the blood discoloured from red to brown...not a good sign...if its whiteish.....its freezer burnt....either way.....order out tonight and throw out the the brown stuff!!!

as long as the meat is not out of date, like anything, the blood runs out of it when set in fridge, and bologna as long as refridgerated after cooking can be reheated in microwave,
