Rabies is caused by the rhabdovirus that attacks the brain and nerve cells of mammals and usually results in death. It is not very common in the US because dogs are not generally allowed to roam, and pets are required to be vaccinated against rabies. It is most common in wild animals such as raccoons, bats, skunks, and foxes. High temperatures will kill the rabies virus. Meat from wild game, as all meat, should always be properly handled and thoroughly cooked for safe consumption.

You really don't have enough to do. How would you butcher it safely? And how would you ensure that it's fully cooked? In theory it could be done, but the whole idea is fantastic. The risks are high and the benefit minimal. Crazy.

Yes...it is safe. The virus doesn't infect muscle tissue or fat, which is what you would be eating.
However, it would be unsafe for you to eat the brain, and since you're apparently eating a dog you shot or some roadkill or something, I wouldn't put it past you.
