Check the castle has a licence to hold a wedding. If it has then pencil in the date. Go to your nearest registry office, and see if they have the date available to do the wedding on the date you have penciled in at the castle. Then confirm both. Obviously - a castle. From there, it will vary greatly depending on what country you are in and the particular castle you wish to get married in.
Some castles have a strict "no weddings" policy. Some are privately owned and you would need to contact the owner to ask permission and negoiate rental fees. Some castle are owned by a municipality. You would need to follow the proper channels in the country where the castle is located to contact the proper authorities to ask permission/arrange the rental. A few castles and/or ruins of castles are owned by the state. Those are probably more difficult, if not impossible, to hire for a wedding. Some castles are actually pretty popular for weddings, and have an office specificly to handle requests and schedule weddings.
Generally, an inquiry at the city hall of the town nearest the castle you are interested in the best place to start. They will be able to direct you from there. Also, do your homework; and internet search on the castle you're interested in is a good idea.
If you don't have a particular castle in mind, you just want any castle, I'd suggest contacting a wedding planner in the area and asking his/her advice. They probably know which ones are avaliable and thier going rates.

Nothing special really! The only thing is that they can be quite expensive - when I eventually get married, I would love it to be in a castle! Hopefully by then, I'll have contacts in that sort of field and can get one cheaper!! lol

Simply find one that's licensed to carry out marriages, book it and pay for it. Job done. Best thing is to look on the county council's website at lists of approved venues. Hedingham Castle in Essex is one example, and does winter weddings for all inclusive packages of up to about £6,000. Summer weddings cost another £1,000 to £2,000.

You need plenty of cash. There are lots of castles in Scotland that do weddings (like Madonna's for instance) but it will cost you a pretty penny. That's how they keep out the riff raff like you and me.
