soak the beans over night better then pour out the water rinse then add fresh water (and wash then before you soak them then cook on med/high until tender when done let them set then stir

You have two options -- quick cook or soaking methods. In the quick cook method, sort the beans and discard damaged beans or rocks. Place the beans in a pan of cold water, and bring to a boil. Boil for approximately 10 minutes. Allow the beans to sit covered in the hot water for an hour, then cook as directed. The other method involves soaking the beans overnight and then cooking covered in plenty of water over medium heat until done. You can season the beans with minced onion and celery or with a hambone or chunk of ham as they cook. With either method, you can reduce the "gas" factor by pouring off the soaking liquid and replacing it with fresh water to cook the beans. Also, don't add salt to the beans as they are cooking because that will toughen them up.

well normally you would soak them overnight.. but I learned a quick soak method.. measure the amount you want to cook (approx 2cups rinced and picked over beans, to clean, sometimes there is gravel in the bag).. put in large sauce pan/pot.. fill pot with water.. way double the amount of beans... dont add any spices or anything. bring to a full boil, immediately turn off, remove from heat, cover and let set for 1hour.. (this takes up what normally would be all night).. after 1 hour. you can cook as usual, either drain (but I like the soaked water, it has bean flavor.. I just add 1 chopped onion, 2 chopped garlic cloves. 1 bay leaf, 2 tsp salt, 1 tsp pepper, 1 tsp crushed fennel seed (makes it taste just right) but optional if you dont have, and 1/2 tsp cayenne powder. also if you have.. you can add a tiny amount of chopped bacon or any salty meat (just adrop for flavor).. let the beans cook for an hour and 1/2.. enjoy.. I eat mine with home made cornbread. you can eat over mashed potatoes, make rice and have (dirty rice) ..

You dont need to soak the beans overnight. It will help to reduce the cooking time somewhat, but thats it. Also dont salt your beans or add any acid to them such as tomatoes, vinegar or lemon juice until they are tender

24 hours if you use cold water. Put them in a pot of water in the fridge overnight. it works like a charm. Otherwise go to a recipie site or google and search coooking dried kidney beans

IM FROM BOSTON AREA, BEANTOWN. MY MOTHER DID ALL THE COOKING BUT I REMEMBER SHE SOAKED THEM FOR COUPLE DAYS I THINK. THE MAIN THING WHEN SHE COOKED THEM SHE ADDED A WEE-BIT OF BAKING SODA TO MAKE THEM NOT CAUSE GAS INSIDE AFTER EATING. CHECK OUT A COOKBOOK - - AND POSSIBLY THE WEB SEARCH. MY MOTHER USED A HUGE BEAN POT THAT WAS HANDED DOWN FROM WHO KNOWS WHEN.

soak for 4 hours then boil for 15 minutes!!take out of water!!then put in a deep bowl add two spoons full of vinegar,two tea spoons of salt,one lemon,1/4 a glass of oil if you want(i don't add oil) then you can add slices of carrot,a can of light meat tune,some green olives,red paprica, onion slices!!enjoy!!(this is for one mug of dried red beans),serve 4-6 persons
