Like a lot of others have said, it depends on where you'll be fishing and what you are wanting to catch. Natural baits like worms and minnows can't be beat. Almost all freshwater fish will eat them readily. I've been an avid fisherman for 50 years and I've caught a LOT of fish in Canada. The most popular fishing in most of the provinces are trout, which either red worms or dry flies will do well on. Go to the local fishing store in the area you'll be fishing. They will be a great source of "wehat's bitng" and what baits to buy. Rooster tail spinners are very reliable as well. Black bodies with whit. yellow, or red accents have put fish in my creel consistently. If you're after bigger fish like Pike, Red Devils are my best producers. They been around for 60 or more years, virtually unchanged. Thats a great track record. For Bass, which is not the most popular fish in Canada as it it is in the Southern parts of the States, my best choice is artificial worms. Black being my favorite color. They are a real producer for Bass ! SLOWLY bounce them along the bottom, especially near fallen trees or other structure. You can also rig them 'weedless' by hidin the tip of the hook back into the body of the worm and that will save you from getting hung up. THAT'S a BIG advantage with plastic worms.
That should get you started off in the right direction but always remeber that the local sporting goods store is almost always your best sorce for local fishing information and DON'T forget to get a fishing license or temporary permit ! Tight Lines :)

Canada is the world's 2nd largest countries, most of our provinces are much larger than texas. Also we have 3 ocean's. Where in Canada and for what?

Now that I've been a jerk, most of our beer stores and fishing liscence outlets have free gov guidebooks on provincial fishing laws. They are excellent telling not only regs, but best places to fish what fish are safe to eat, what bait to use etc. Best of all they are free

Depends what species you're fishing after........
For Trout / Salmon / Steelhead use flies, same types used in the US.

For Sturgeon a ball of salmon eggs wrapped in ladies stockings

For Carp, use Corn or Worms

For Flathead catfish, strips of fish (books + TV shows I've seen mention use of a species known as "Goldeye")

For Northern Pike...... fish dead baits, or artificial lures (e.g. Rapala, Panther-Martin, STORM, BlueFox, etc).

Fly fishing is the ultimate fishing experience. The Royal Wolff, the Adams Mesquito and a good elk hair caddis can catch fish anywhere in the world.

Nightcrawlers and minnows are the overall best bait, but if your fishing with artificials I can tell you some good setups.

Bass: spinnerbaits, buzzbaits, jitterbugs, rapalas, jigs and deep divers.

Northern Pike: spinnerbaits, buzzbaits, stickbaits, jitterbugs, jerkbaits, big rapalas, spinners and deep divers.

Muskie: muskys like almost everything that northerns do they just like the baits bigger.

Walleye: deep diving rapalas, trolling plugs, jigs and spinners.

Panfish: very very tiny rapalas, spinners and jigs.

Perch: small baits that are red, like spinners and jigs.

Any kind...worms...etc. We Canadians use the same kind of bait as the rest of the world, depending on the kind of fish we want to catch.

if freshwater fishing,use your normal baits for panfish,bass and walleye, but larger baits are good for big northern pike and musky

I've always had the best luck fishing in Ontario with leaches.
