Just use a super-sharp knife! Thinner knives (like filet knives or even steak knives) work a little better than a big wide butcher's knife, in my opinion. And I use a really good sharpening stone!

The thinnest, sharpest knife you can find. Fillet knife was a good suggestion, as was a sharpening stone. If you want to go for a bit of panache, do an internet search and get a straight razor. Thse are hollow-ground ('dished' on both sides approaching the edge), bringing the blade to a very narrow edge. I use an Arkansas stone, which is very smooth and fine-grained, to sharpen my knives. It won't remove a lot of material, so a really dull knife takes a long time to bring back unless you use a coarser stone to start with. Use a bit of household light machine oil on the stone for sharpening. You don't need the flexibility of a fillet knife for cutting something like sushi, but it would take a sharp edge. I'd avoid serrated knives since they tend to tear and need to be sharpened in a special manner. But if you use a flat stone FLAT on the flat back after a sharpening rod between the teeth on the beveled side, they can be quite sharp.

It has to be super sharp and if it's a little wet it makes it easier.
for the home cook a serrated knife is easier because it will cut good even when it doesn't have the best edge. Wipe the blade with a damp towel between slices and you'll be O.K.

If you are going to prepare Sushi on a regular basis, then invest in a good quality Sushi Knife.
If you are only going to prepare it occasionally, then a long box cutter blade works great.
