In bottom of crock-pot, layer veggies....I use diced potatos, carrots, celery, green peas & pearl onions. Layer meat on top of veggies. Pour over 2 cups V-8 or tomato juice, a splash of water & seasoning pkg. Cook on low 10 - 12 hours til done......Serve with homemade cornbread of course!!

Beef Stew with Tomatoes
* 2 lb stew beef pieces, cut in 1/2-inch cubes
* 1 lb small white onions, fresh, frozen thawed, or from jar
* 1 lb potatoes, peeled, quartered
* 4 ribs celery (cut 1")
* 6 carrots, cut in chunks, or about 8 ounces baby carrots
* 2 cans (14.5 ounces each) tomatoes, diced, drain and reserve the juice
* 5 TBLs instant tapioca
* 1 TBL brown sugar
* 1 bay leaf
* 2 tsps Kitchen Bouquet or Gravy Master
Season beef with salt and pepper. Place in slow cooker. Add vegetables. Mix tapioca, sugar, tomato liquid, and kitchen bouquet. Pour over stew. Mix a little bit. Add bay leaf. Cook on Low 10-12 hours; High 5-6 hoursLet sit a little bit before serving - it will thicken a little.

Here's my beef stew. I would just go ahead and add the seasoning packet to this recipe. Maybe omit the Italian dressing and salt and pepper.
2 pounds beef stew meat, cubed
1/3 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
2 cups beef broth or stock
1 cup tomato sauce or tomato juice
1/3 cup Italian dressing
2 teaspoons Worcestershire sauce
1 large onion, chopped
1 clove garlic, minced
4 carrots, sliced
4 russet potatoes, diced
2 stalks celery, diced
Place all ingredients in slow cooker, stir, place lid on top and cook on high for 4-6 hours, or low for 8-10 hours.

Use vegetables on hand for this tasty slow-cooked beef stew. The condensed beef broth keeps it flavorful, and the wine adds a little zing. If you don't have the wine, more beef broth or water will work fine.
INGREDIENTS:
1 1/2 to 2 pounds stewing beef, cut in 1/2 to 1-inch cubes
2 to 3 medium potatoes, cubed
1 medium turnip, cubed
1 cup sliced carrots
1/2 cup chopped onions
1/4 to 1/2 cup sliced celery
1/2 to 1 cup sliced mushrooms
1/2 cup butter beans or lima beans
1 can (10 1/2 ounces) condensed beef broth
1/4 cup red wine
1/2 teaspoon salt
1/4 teaspoon pepper
pinch thyme
3 tablespoons flour blended with 1/4 cup water
1/2 cups frozen mixed vegetables, corn, or peas, optional
PREPARATION:
In slow cooker, combine beef, potatoes, turnip, carrots, onions, celery, mushrooms, butter beans, beef broth, wine, salt, and pepper. Cover and cook on LOW for 9 to 12 hours, or on HIGH for 5 to 6 hours.
Add thyme and frozen mixed vegetables, corn, or peas, thawed, if using. Pour liquids into a medium saucepan and simmer to reduce slightly. If desired, skim off excess fat. Add the flour and water mixture and simmer until thickened. Add back to vegetables and continue cooking on LOW until serving time.
Serves 6.

Dice some potatoes, carrots, onions, leeks, mushrooms, sweet potato, turnip, swede. Chuck it into the slow cooker, add some diced beef, garlic, mustard seed, salt, pepper, worcestershire sauce and the beef stew seasoning packet and then go and lie down for a few hours!!
Make sure you parboil the veg first otherwise it won't cook as quick as the meat and will be too hard.

Get the best meat you can. I use free range beef from a highly reputable meat market.
Trim the stew meat carefully. Remove any gristle, sinew, or fat.
Brown the beef cubes in a skillet. (One may dredge them first in flour if one wishes - it will thicken the stew while the meat cooks)
Add to slow cooker with chopped onion, potatoes, carrots, celery, and turnips. (You can replace the turnips with a small can of diced Ortega chilies) Add a small amount of liquid - red wine or beef broth - and cook according to cooker directions. Add your seasoning packet or not. If not, season with herbs, salt, and pepper.

3 carrots, cut up
3 potatoes cut up
2 pounds beef chunk or stew meat, cut in 11/2-inch cubes
1 cup water or beef stock
1 tsp Worcestershire sauce
1 clove garlic
1 bay leaf
1 tbsp salt
1/2 tsp pepper
1 tsp paprika
3 onions, quartered
1 stalk celery with tops, cut up
Pull all ingredients in Cooker in order listed. Stir just enough to mix spices. Cove and set to low for 10 to 12 hours ( high: 5 to 6 hours)

absolutley. It would be perfect. Stew eaten after the first day always taste better. Gives time for all the ingredients to marry. don't forget to lable each container, because once they r in the freezer u forget whats in the container.
