Generally,mayonnaise, mustard,Salt and pepper,Paprika.
Sometimes i substitute sour cream for the mayonnaise.or mustard with Dijon mustard or spicy brown mustard.
If I'm in the mood I add one or more of these also. finely chopped green onions, or minced parsley, or chopped chives, or chopped shrimp, crab, or salmon,
(this is for special occassions) crumbled blue cheese, and chopped olives.

Boil your eggs for 1 to 15 minutes. Before shelling, let the cooked eggs sit in cold water to cool -- makes the shelling easier.
Slice the eggs in half. Then, mash the hard yolks into a powder-like texture. Then add mayo to moisten (don't use Miracle whip unless you like 'em really sweet.) Then add a bit of dry mustard,salt, a dash of vinegar and a smidge of worcestershire sauce and hot sauce. Mix and taste. Keep adding dabs of all these ingredients-- bit at a time until the flavor and texture are just as you like. Then fill the whites. You can also use a dash of wet mustard for moistening, experiment with several types; I prefer dijon. Sorry that I cannot supply exact measurements, but I have never measured anything for these treats that my friends have come to expect at every gathering. After you have a basic feel for the preparation you can add your own flourishes -- a touch of guacamole, mix in a bit of finely dice crab meat, dust with a spinkle of paprika, use a sliced olive as garnish.
A tip for the egg whites. As you slice each egg in half and empty the yolk into the mixing bowl, set the whites on a paper towel to dry a bit to eliminate slipperyness.

Hi there i love deviled eggs and they are so good with many things...here is my recipe.
boil the eggs
remove the shells under cold running water
cut in half
remove the yolks save the whites
with a fork mash the yolks
to this mixture add:
enough mayonaise and mustard to make creamy
but not too much or it will be too runny
add a dash of salt and pepper
1 tablespoon of sweet pickle relish
a dash of sugar
mix this together very well and then fill each egg white
sprinkle paprika on top for a nice touch
chill before serving

Mash up the yolks of one dozen hard boiled eggs with enough GOOD mayonnaise (I use Best Foods or Hellman's), some red wine vinegar, and Coleman's dry mustard to make a stiff mix. Adjust for taste with Tabasco or salt & pepper.
Chill. Fill egg whites. Dust with sweet Hungarian paprika.

Aside from the egg, I use mayonnaise, a little squirt of mustard (the brown dijon kind of you want to be bold) some paprika, pepper, and just a tiny smidge of salt. Stir it all together and voila! Yummy deviled eggs. Please don't ask for exact amouts, I wouldn't have a clue! I just keep adding until it tastes right. :)
Edit: I see most of the other recipes have pickle relish. I wonder if that's a regional thing. I'm from MD and I've never heard of that. Relish is for hot dogs! LOL

I like them with Relish and Dill...
Deviled Eggs
12 hard-cooked eggs
1/4 cup mayonnaise
2 to 3 Tablespoons sweet relish, drained
1 teaspoon prepared mustard
1 Tablespoon fresh dill, chopped
1/4 teaspoon hot pepper sauce
Paprika
Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks. Stir in the mayonnaise, relish, mustard, dill and hot pepper sauce. Pipe or stuff into egg whites. Sprinkle with paprika on top. Refrigerate until serving. Yield: 2 dozen.

Mayo, pwdr/ground mustard, lil cider vinegar, finely diced cheddar cheese & paprika. & of course the hard boiled egg yolk mashed up. :) ~Paprika sprinkled on last & then everyone can salt & pepper after serving if needed or want more seasoning.
P.S. sometimes I like to add a lil bit of sugar depends on what I'm hungry for. Really can mix up whatever you want. mayo, mustard, worch sauce, etc.
A pastry cutter works well to cut egg boiled eggs for egg salad sandwiches. :)

One ingredient no one else mentioned that I sometimes throw in is Parmesan cheese.
I have a neat and clean way to mash the yolks and re-fill the whites. Use a zip-lock bag to mix it all up in. I just mash it all together with my hands. Then you cut a Small corner of the bag and pipe the yolk mixture into the whites (use it like a pastry bag). It looks professional and no bowl to clean.
