That's a typical type of rear sight for guns of that era. the rear sight elevates and the slide is set for the distance as indicated by the numbers on the bracket portion. The numbers on European rifles are typically in meters. The distances indicated on the graduated slide often were optimistic to say the least, often straying beyond the useful range of the cartridges.
They literally lobbed the bullets as far as possible by shooting with the barrel canted up into the air to compensate for bullet drop at long ranges. It works suprisingly well.
The lowered position is used out to 100 meters, then you start using the elevator at distances beyond that.
Proper sight picture with this type of rifle is with the target setting on top of the front sight, not covered by the front sight.

the back sight is adjustibleand should have number starting at 1 or 10 and goes up. the repersent yards or meters and you push the block up to the distance your target is. For example if your target is 50 yards away you would slide the block up to the 5 or the 50 (what ever yours is marked as) to adjust the elavation of your back sight. They's sights are know as military trainers.

The square bar is for distance shooting. Each click represents a distance. Say you want to shoot a target that is 700 yards, you would raise the square to the 700 yrd mark and it should be on. Not sure what yardage you need to zero it at in order to get the distance sight to work.

It sounds like you're trying to describe a flip-up rear sight, with different "leaves" for different ranges. I'd suggest you take it to a qualified gunsmith to be sure, and have him check it to see if it's safe and functional. It sounds like it is probably a "wall-hanger." By the way, the 7x57 Mauser is one of my favorite calibers.

7.65 argentine mauser. YOU have to take it and target practice until the sight is where you like it and you are consistently in the bullseye
