I want to cook healthier meals with lots of flavor and ditch the fat.

JB. You can look for any heart disease or diabetes cookbooks. Both diseases must limit fat sources, so there are more herbs used in the recipes. Vegetarian cookbooks are great for herbs usage too. Check with your local hospital to see if they publish a cookbook. Some do & they are wonderful. You can check out the Heart Association or American Diabetes Association websites for recipes and leads.

FYI:
You can cut fat in any recipe, depending on the recipe will depend on what you can substitute it with if you even need to substitute at all.
Baking - equal amounts of babyfood applesauce for oil
2 egg whites = one whole egg
Meat recipes - you can use chicken broth for any fat listed, to taste
Instead of butter on a baked potato, try either dry, fat free sour cream only or top with steamed fresh veggies
Use cooking spray instead of cooking in oil.
Bake, broil, boil, grill or steam on a rack for any meats or fish to allow fats to drip off.
When baking fish, put thick slices of onion or lemon under the fish filets to keep the moisture
Remove all skin, fat and bone from any meats
Use lemon juice on fresh veggies instead of butter
Instead of Oil and Vinegar, try just vinegar and black pepper on a salad.
If you MUST have the oil, stay away from a vinagrette and use the oil and vinegar. You can control the amount of oil. Always order your dressing on the side.
Make a bouquet of herbs and cook with your meats or soups.

First of all, herbs and spices can't replace fat... They can however replace salt, to improve low sodium diets...
However, if you cook "mediterranean style" you can replace unhealthy fats with a touch of olive oil...
Look for any Mediterranean Cooking books.
Also most recipes for roast foods can be made with almost no fats or oils added..Roast veggies and fish or meat are absolutely delicious, and easy to do.... Sear your meat to seal in the juices, then place in the oven and baste during the cooking with its own natural juices and fat to keep moist, you needn't add anything (If it's too dry, add a half cup of broth or water to baste with).
For veggies shake some mixed herbs over them, and drizzle a little bit of olive oil, then roast in the oven... Scrumptious...
For fish: sprinkle with herbs and lemon juice wrap in wax or foil paper and bake about 20 min.
