I really want to make some, but i also want to make this recipe for eggplant pasta (eggplant, cheese tortitllines, some other veggies & spices & stuff). Would the 2 be gross together? And if so, what other things could I make with cornbread? Or the other recipe, actually. Just no thanksgiving things. I'm a vegetarian, and really sick of thanksigiving leftovers.:P

Hi Sabrina, If I were a vegetarian I would check out the winter squash in the market now. There is this " butternut squash" that you can make the best soup with or use it with other ingredients to make a filling for raviolis or tortellinis. It's served with a butter sauce over these mini pastas. Here is another idea, buy a bag of mixed peppers from the freezer section. (red, yellow and green with onions) plus a 8oz carton from produce section of mushrooms that you saute first then add the eggplant and canned pureed tomatoes to it with italian seasonings and garlic. Cook all this in olive oil and serve it over angel hair pasta.

One tip about the eggplant it can be bitter so peel it and slice or cube it and salt it put in a colander and put a weight on top so the salt will pull out any bitterness. then rinse it and add to any recipe.

You also mentioned liking cornbread. We have it with fish and cole slaw. since you dont' eat meat you can use tofu. In the south we make corn pones it's cornbread, salt and water mixed to a very thin batter and then dropped onto a hot cast iron skillet that has cooking oil in it. Fry until golden and drain on paper towels we usually eat these with greens like collards, turnip greens or bowls of dried beans that are cooked into almost a soup....well that is all I can think of at 3am...hope this helps you out...best wishes in your kitchen cooking and also have a beautiful new year...Mama Jazzy Geri

Hmmm... well, the other nite I had red beans and rice, turnip greens, and cornbread as a meal. COMPLETELY a Southern meal, but really tasty.

I don't see why the cornbread couldn't necessarily go with the egplant pasta. Not typical, but why not?

Here's an awesome salad recipe though, it goes great w/ Italian foods (or by itself, for that matter).

Romaine or Greenleaf lettuce (or baby spinach leaves, if you're over the spinach scare)
Grape tomatoes (cut in half)
Green onion (chopped)
Walnuts

But it's really the dressing that makes it special!

1/4 cup extra virgin olive oil
2 Tbs Apple Cider Vinegar
2 Tbs sugar
1 Tbs Oregano
2-3 drops Tobasco sauce
Dash of black pepper

The measurements are for enough dressing for a full size salad. When I make a smaller salad I either divide the measurements by 2 or 3, or just don't pour on all the dressing! (Although, I wouldn't store the leftover dressing for too long. The sugar tends to crystallize.) You put it together in a container with a lid, shake it up, then pour on the salad.

The recipe actually calls for mandarin oranges instead of the tomatoes (it's good too), but I usually prefer the taste of the tomatoes. It's a good salad to start from, really easy to play around with. The dressing and green onions are really what give it the awesome flavor.

Beans. By that I mean specifically Pinto beans. Slow cooked all day.
Don't Add The Tomato Sauce, Diced Tomatoes or Anything Tomato until the beans are soft.

Cornbread goes great with that.
Mexican food, soul food (although they will probably serve Red Beans with that) and just about anything southern.

Have some fried taters on the side too.
I almost said add ham, but then saw vegetarian.
Cheese is a good replacement. Or sour cream.

Reheated cornbread with butter and honey, you can't possibly go wrong.

Actually, cornbread goes very good with vegetarian chilli as well as vegetable stew. And there is always the old standard of cornbread with fried potatoes strips and beans.

To most people cornbread is a normal everyday food. It goes with everything from beans to buttermilk. So don't think of it as a special occasion food. Eat it whenever you like, with whatever you like. Eat it plain we do at our house.. If you make the batter a little thick add some cayenne pepper and make into balls and fried it is hushpuppies. Cornbread would be good with it. Many people bread eggplant in cornmeal and fry it. Cornbread would also be good with vegetarian chili and is fabulous with many types of beans/bean soup.

Red beans and rice or any bean and rice. Butter beans are great. Most "Soul food" meals feature cornbread of some kind. Chili is also nice on top of the bread. Maple syrup and butter are personal favorites....

Cornbread in the south goes pretty much with anything my favorite is a bean soup instead of crackers I use cornbread

I love to fix a big pot of homemade pinto beans & serve with hot from the oven cornbread!! Serve with fried or mashed potatos, fried okra, silver queen corn on the cob, sliced tomatos & green onions....Don't forget the chow-chow for the beans!! I would serve garlic bread with the pasta dish.......
