I can't use any butter or sugar when baking.
What can I substitute butter and sugar with instead?

Maple syrup
Honey
Apple butter
apple juice
oil
etc.

I don't like margarine or shortening because they are hydrogentated and contain transfats. If you can't use butter try using nut oils for baking, the flavors work really well in cookies.

You've got some good sugar subs listed, malt syrup and date sugar are also excellent substitutes and have great flavors as well. Stevia is also a good sweetener and is plant based. You can also use less sweetener and add dried fruit such as raisins, dates, dried cherries, etc.

The biggest challenge with subbing things out for cookies is it changes the textures so much so you'll have to experiment with getting good texture back. From you list it looks like your't trying to go healthier - wheat germ gives a nice crunch and has a nutty flavor plus excellent nutrition. You can omit greasing the cookie sheet if you bake on parchment paper, this gives your cookies a better bottom texture anyway and will help keep them from burning if you leave them a little too long. Ground nuts can also be good for both texture and flavor, you can sub them in for part of the flour, don't sub too much.

I love to cook with whole grains, you can try ww cake flour for cookies, it's a little finer grained and gives you a lighter cookie than regular ww. Another cookie trick, after creaming your butter and sugar (or subs) when you add eggs, beat for a really long time til the mixture gets light and fluffy. It incorporates lots of air which puffs when you bake and makes the cookies really light.

try subbing the butter with margarine or oil ( just nat as much)
and the sugar try splendor- it tastes like sugar but is not - my dad is diabetic so that is what i use!!!

before you try splenda, make sure it doesn't make you sick. it puts my mom in bed for a day or two if she has any. you can probably just drink a glass of sweet tea, using splenda instead of sugar to make sure you have no reaction to it.
