Overnight Lasagna
INGREDIENTS:
16 oz. pkg. ricotta cheese
3 oz. pkg. cream cheese, softened
1 egg, beaten
1 cup grated Parmesan cheese
2 cups frozen cut leaf spinach, thawed, well drained
1 lb. frozen meatballs
2 (28 oz.) jars spaghetti sauce
1 cup water
3 cups grated Mozzarella cheese
8 uncooked lasagna noodles
1 cup grated Parmesan cheese
PREPARATION:
In medium bowl, combine ricotta cheese, cream cheese, egg, and 1 cup Parmesan cheese. Beat until blended. Stir in thawed spinach.
Bake meatballs according to package directions. Remove from oven and coarsely chop. In 13x9" glass baking dish, pour 1 cup spaghetti sauce. Layer 4 lasagna noodles over sauce. Top with half of the ricotta mixture, then half of the cooked, chopped meatballs. Pour half of the water over. Sprinkle with half of the Mozzarella cheese. Top with half of remaining spaghetti sauce. Repeat layers, ending with spaghetti sauce. Top with 1 cup Parmesan cheese.
Cover tightly with foil and refrigerate at least 8 hours, or overnight. When ready to eat, place in preheated 375 degree F oven. Bake for 1 hour, or until lasagna noodles are tender when pierced with fork. Uncover and bake 10-15 minutes longer until bubbly. Remove from oven and let stand 10 minutes before serving. Serves 10

Any pasta dish freezes well and Asian dishes do too. Mashed potatoes, rice, cooked meats all freeze well. Do not freeze things like boiled potatoes as they will be mushy. Frozen shrimp only takes a few minutes to defrost and saute. Be sure to get the peeled, deveined raw shrimp. Then add a salad or veggies and dip, etc. Soups, chili, stuffed peppers, cabbage rolls, meatballs, all freeze well. There are endless dishes that can be frozen.

Chicken Tetrazini:
12 oz. medium egg noodles,cooked and drained
4 chicken breasts, boiled, deboned, chopped
8 oz can sliced mushrooms,drained and sauteed
with 1/2 cup of butter or margarine
2 cans cream of chicken soup
1 pint sour cream
parmesan cheese
Mix all ingredients, except cheese, together.Pour into 2 casserole dishes. Sprinkle grated parmesan cheese on top. Bake at 350
degrees until bubbly.(Time varies by type of dish used and whether casserole has been frozen or refrigerated.) It generally takes about 45 min. to bake. Note: I like to use low fat sour cream and reduced fat cream of chicken soup when I make this. I also prefer to use fresh mushrooms which I saute in a small
amount of margarine. Either way, it tastes great!
Chicken and Stuffing Casserole
4 skinless, boneless chick breasts, cut into bite-size pieces
1 can cream of mushroom soup
3 Tbsp. olive oil
3 garlic cloves, pressed
salt and pepper to taste
1/2 tsp. powdered poultry seasoning
1 tsp. ground paprika
1/2 tsp. Durkee brand Grill Creations Chicken & Fish Seasoning
16 oz. sour cream
1 cup chicken broth (Superior Touch)
1 cup sliced fresh mushrooms
1 whole roasted red pepper, chopped
1/2 large onion, chopped
8 oz. herb-seasoned stuffing mix
1/4 cup melted butter
1 cup mixed frozen vegetables, thawed and drained
1/2 cup frozen peas, thawed
Season chicken with salt and pepper. In a skillet, saute the chicken in the oil with the onions and mushrooms til browned. Add garlic and saute for 1 more min. Add the chopped roasted bell pepper stirring well to blend. At this point sprinkle on all the seasonings and blend well. In a large mixing bowl, mix together the sour cream , broth and soup, add skillet contents. Taste and adjust seasonings. Blend well. Pour mixture into a 2-qt. casserole dish. Mix together stuffing mix, butter and broth. Set aside. Spread stuffing evenly over and bake for 45 min. at 350. Serve with cranberry sauce, salad, and biscuits.

any dish can be frozen but you need to stay with dishes that have a sauce and the reheating process will not over cook or dry out the product........something like fish filets would be a nono as when it is reheated its tough and dry.....and when you make your dishes if it would normally be served with a sauce freeze it with the sauce added................
