milk is an emulsion but what happens during fermentation letting it to deposit in to hard solid !

milk doesn't curdle if you use unsalted butter.....salt will curdle milk, unsalted or "sweet" butter usually, will not....temperature also has an effect.....smoking hot butter...not so good...melted but cooled...no curdling...softened...none either

Lactose gets fermentd to buterate a solid derivative of butyric acid.
