You know those cornmeal balls fried and served with seafood....
I'm looking for a homemade recipe that I can make at home.

Southern Hushpuppies

2 cups yellow cornmeal
1 teaspoon sage
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1 small onion -- minced
3/4 cup milk
1 egg -- beaten

Heat oil in a deep fryer, or large saucepan to 370 degrees. In a mixing bowl combine cornmeal, sage, salt, cayenne pepper, black pepper and onion. Add milk and egg and mix until well incorporated. Gather tablespoons of the dough to form
1 inch balls and drop into heated oil. Fry until golden brown. Drain on paper towels and serve.

Here's my recipe for great Hush Puppies -

1 3/4 cup cornmeal (yellow or white - I use white)
1 1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 egg - beaten
1 cup buttermilk
1/4 cup finely chopped onion

Combine all dry ingredients (first 4 ingredients). Add egg and buttermilk. Mix lightly with spoon. Stir in onion. Drop by Tablespoons into deep hot oil. Fry only a few at a time. Turn only once. Fry until golden brown 3-5 minutes. Drain on paper towels.

HUSH PUPPIES:
1 cup self-rising white cornmeal
1/2 cup self-rising flour
1/2 teaspoon salt
1 teaspoon sugar
1 egg
1 cup buttermilk, more or less
1 to 2 tablespoons green onion, minced
dash hot pepper sauce (optional)
pepper or garlic powder, if desired
Combine the cornmeal and flour with the salt and sugar. Blend in the egg and add enough buttermilk to make a thick batter that will drop slowly but easily from a spoon. Add any green onion and other optional ingredients you want, then drop teaspoonfuls into fat (about 375 degrees) at least 3 inches deep. Fry until golden and drain on paper towels. Keep warm in a low (150 degrees) oven until ready to serve.

1 large egg (beaten slightly)
1 cup buttermilk
1/2 cup finely minced onion
1/4 cup water
2 cups cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
Shortening or cooking oil

1. Blend egg, buttermilk and onion in a bowl.
2. In another bowl, combine cornmeal, flour, sugar, baking powder, baking soda and salt.
3. Add egg mixture to cornmeal mixture and stir just to moisten (don't overbeat).
4. Drop batter by tablespoonfuls into hot oil (375 degrees). Fry 1 minute, turn and fry another minute or until golden brown. Remove and drain on paper towel.

Makes approximately 24 hush puppies.

Mississippi Hush Puppies:

Substituting beer for milk makes these lighter and tangier.

1 cup self-rising cornmeal mix
1/2 cup self-rising flour
1 tablespoon sugar
1 large egg
1/2 cup milk or beer
1/2 cup diced onion
1/2 cup chopped green bell pepper
1 jalapeño pepper, chopped
Vegetable oil

Combine first 3 ingredients in a large bowl, and make a well in center of mixture.

Combine egg and next 4 ingredients, stirring well; add to dry ingredients, stirring just until moistened.

Pour oil to a depth of 3 inches into a Dutch oven or large saucepan; heat to 375°.

Drop batter by rounded tablespoonfuls into hot oil, and fry in batches 2 minutes on each side or until golden brown. Drain on paper towels; serve immediately.

Yield: 1 1/2 dozen
