Hachis Parmentier

INGREDIENTS:
1-1/2 lbs. chopped sirloin
2 lbs. baking potatoes
6 Tablespoons unsalted butter
2 Tablespoons vegetable oil
4 garlic cloves
2 med. onion, diced
2-1/2 teaspoons salt
freshly ground black pepper
1 cup milk
3 Tablespoons grated Gruyère cheese
1/4 cup chopped parsley
PREPARATION:
1. Grease a 9-inch glass pie plate with 1 teaspoon of the butter.

2. Peel and cut the potatoes. Place them in a large saucepan, cover with cold water.

3. Bring the potatoes to a boil over high heat.

Cook for about 20 minutes or until they are soft.

4. While the potatoes are cooking, heat the oil and 1 tablespoon of the butter in a large skillet. Add the garlic and the onions and cook over medium heat about 7 minutes. The onions should be soft.

5. Add the meat to the onions, sprinkle with 1-1/2 teaspoons of salt and some pepper. Turn the heat to high and cook about 10 minutes, breaking up the meat the the spoon.

Preheat oven to 350.

6. Pour the milk into a small ssucepan. Add the butter and heat over moderate heat, watching so that it does not boil.

7. Drain the potatoes, return them to the pan and mash them with potato masher or fork. Place the pan over low heat and slowly pour in the milk/butter mixture, mashing until the potatoes and milk are well combined. Stir in the remaining salt and some pepper.

8. Spread half of the potatoes on the bottom of the plate. (An off-set spatula works well for doing this). Using a slotted spoon, remove the meat and onions from the skillet and spread it over the potatoes.

9. Sprinkle some parsley on top of the meat. Top with the remaining potatoes, sprinkle with cheese and dot with remaining butter.

10. Bake in the oven for about 40 minutes or until the top is crusty and slightly browned.
To serve:
Cut the pie into 4 wedges and serve hot from the oven. A simple green salad makes a wonderful accompaniment.

Hachis can me made completely ahead and reheated or partially ahead and baked just before serving.

It can also be made with leftover pot-au-feu or pot roast meat

Ingredients (serves 4 people):

- 2 onions
- 2 garlic cloves
- butter
- 2 small tomatoes
- little less than 1 lb of ground beef
- flour
- salt and pepper
- herbs of provence
- 1 egg yolk
- parmesan
- potato puree
- grated cheese


Preparation:

Brown the chopped onions and cloves of garlic mixed with a good piece of butter.

Add the diced tomatoes, the ground beef, 1 tablespoon of flour, then some salt, pepper, and herbs of Provence.

When cooked, cut the fire and add the egg yolk and a little Parmesan.
Mix well.

Spread out at the bottom of a gratin dish.
Prepare the mashed potatoes.

Spread them out on the top of the meat.
Sprinkle with grated cheese and put in the oven until the top gets brown.
