I think Everclear is pretty versatile however I have had a great experience with a Cherry Slushee which is exceptionally good

Cut a hole in the top of a large watermellon and shove the open everclear bottle in it,(just the tip of the neck) and wait till the bottles empty then cut the watter mellon in half and serve the two sides. YUM YUM<

we used to make one called a "flaming armadillo" it's a double shot of amaretto topped with everclear, set on fire to warm for 5 seconds, cover with coaster to douse the fire and then slam it.
