Depends on what will you do with the chicken... here are some ideas. For all the marinades below, marinate the chicken overnight and then grill.

- Tabasco, BBQ and Worcestershire sauce.
- Mediterranean: 500ml Yogurt, 2 onions, 5 cloves of garlic, half a lemon(with the peel too) and some oil. blend all together.
- South-East Asian (Ayam Panggang): Ginger, garlic, soy sauce and lemon grass (if available).
- Italian: Thyme, Basil, garlic, yogurt or tomato puree(red or white, your choice), and vinegar.

RASPBERRY BARBECUED CHICKEN

1/4 c. raspberry vinegar
2 tbsp. cooking oil
1 tsp. dried tarragon
Salt and pepper
1 c. frozen raspberry juice
1 tbsp. cornstarch
Fresh raspberries

Mix vinegar, oil and tarragon in bowl. Salt and pepper 4 skinless chicken breasts. Pour vinegar mixture over chicken; cover and marinate at least 4 hours. Place on lightly greased grill and brush with marinade to keep moist. Whisk together undiluted frozen raspberry juice and cornstarch.
Cook over low heat until thick and smooth. When chicken is cooked, make pool of sauce in dish and place chicken on top. Sprinkle fresh raspberries around chicken.

HINTS: This is a very easy tasty dish. You do not need the sauce if you are not a sauce person.

This is easy to take camping; just make marinade at home and put in a Ziploc bag with the chicken. I would leave the sauce and raspberries at home. This is a good dish if you're watching cholesterol intake.

LITE & EASY MARINADE FOR FISH OR
CHICKEN

2 c. no fat plain yogurt
Juice of 1 lemon
1 tbsp. Dijon mustard
2 cloves garlic, pressed
2 tsp. each basil, oregano & black pepper

Combine the above ingredients until well blended. Arrange fish or skinless chicken or turkey breasts in a shallow dish. Pour marinade over the meat. Cover and refrigerate at least 2 hours. Remove chicken or fish from dish, eliminating excess marinade. Bake or broil until done. Fish and chicken can also be rolled in Italian style bread crumbs before cooking. Delicious and moist.

For a quick marinade that I always keepon hand is the Mc Cormick's Italian Herb package but instead of following the package recipe rub the dry seasoning on the chicken as is, than in the pan add butter and a few splashes of white wine and just make sure all the chicken is coated and the seasoning is moistened. You won't be disappointed!

Bacardi's Mojito Mix, with garlic, onions, cilantro, bell pepper and your good to go. It's the frozen kind.

Tequila and lime chicken marinade is good too. Make sure you use good tequila though.
