It depends on what kind of motor you're using. If you are using a servo motor with an encoder, be it absolute or incremental, consider making a measuring device using the encoder feedback angle and some trig to determine the thickness of an item. If you are using a simple electric motor, an energy changing device is always interesting. A motor that swings a magnet that comes in proximity to a coil that powers a light.... something to that effect. Reading your question again now though, I think you may want to ask things to do with an engine; not a motor.

The coolest thing I have ever made is a solar powered Car, The solar panel hooks up into an electric motor that turns the wheels. If you're looking for something easy, and fun this is it.

I once saw a porn movie where a phallus was attached to a slide and connected to a wheel, the stroke could be adjusted by connecting to different holes.
Or, make a small circular table, hook up a motor to turn it. Set your gargae can on it, and when a cat comes to raid the garbage, spin it off.
Or, make a treadmill like the ones they put in a hamster cage, only bigger, put a motor on it, throw a cat in a let tabby get some real exercise.
Or a toliet seat lifter--for him, and lowerer--for her.
