Try using sliced sourdough bread or rye bread, and some thinly sliced ham with the cheese. Right before it is finished, you can add some cooked bacon and thin slices of tomato. If you don't like meat, skip the ham and bacon, and try some thin slices of pickle with the tomato. Finely diced green onion is also a nice touch. Cooked ortega chiles and cheese is a good combo for a grilled cheese sandwhich...good on sourdough. You could add a fried egg and tomato. Have a bowl of your favorite soup with your sandwhich and you are set! Experiment and have some fun with it.

Use Swiss and provolone cheeses, dip the sandwich in thick batter, and deep fry in 4 inches of hot oil until golden brown. Sift powdered sugar over it, and serve with raspberry jam as a dipping sauce.

Batter Recipe and Frying Method

2 egg yolks
1 cup ice water
1 cup all-purpose flour
1 teaspoon baking soda

Make the batter by beating the egg yolks.
Stir in the ice water.
Measure the flour and baking soda into a sifter, and sift the mixture into the ice water and egg yolk.
Stir with a large spoon, but don't mix it too well.
You should still have many visible lumps in the batter.
Slice the sandwich in half from corner to corner.
Dip one half of the sandwich in the batter, while holding it together with your fingers (the batter will hold the sandwich together in the shortening).
Coat the sandwich well, but let any excess batter fall off.
Drop the battered sandwich half into the oil.
If your pan or fryer can fit the other half of the sandwich, batter that piece and drop it into the fryer as well.
If your fryer is small, you may only be able to fry only one half at a time.
Fry the sandwich for 6 to 8 minutes, turning it over halfway through cooking time.
It should be golden brown when done.
Remove the sandwich halves to paper towels to drain.
When you can touch the sandwich, slice each half in half making four pieces.
Dust the sandwich with powdered sugar and serve it with a small bowl of raspberry preserves.

1) Add a bit of paprika. It's not wildly different but it's noticeable and absolutely yummy.

2) A slice of wafer-thin ham or salami.

3) Maybe some chives?

4) Cherry tomatoes!

5) Really can't stress the paprika point enough, it adds a nice tang.

6) Mine are usually toasted cheese & onion. Absolute class.

My niece who's not allowed to use the stove yet, toasts 2 pieces of bread in the toaster, put a piece of cheese on and then microwaves for about 30 seconds. It works.
We've also used the iron, flat iron, (then we realized it had hair goo on it. ewwwwww) the radiator (inside, not car)
George Foreman grill, waffle iron( that was the coolest looking sandwich!!)

Italian HARD bread, Mozzarella, Fresh Basil and Pesto Spread. Butter the outside of the bread and grill as you would a plain ole cheese sandwich!

Enjoy!
