There's a pace in Merchantville, NJ (right across the river from Philly) called the Taste Cafe; they have amazing creamed chipped beef. To make it, all you need to do is make up a basic white sauce then add in some dried chipped beef and simmer them together for a little while. You can pick up bags of dried chipped beef at the grocery store, they usually have them next to the prepackaged deli stuff.

2 jars dried beef, rinsed and drained and torn into bite size pieces
1/4 cup sweet onion, chopped
2 tbs butter
2 tbs flour
1 cup milk
2 hard cooked eggs, sliced
black/cayenne pepper to taste
toast or biscuits
In a skillet, over medium heat, cook onion in butter until transparent. Sprinkle flour over butter, onions, and cook (stirring occasionally) until it becomes golden and about the consistency of peanut butter. Slowly stir in all milk and cook until it starts to thicken. Add beef and eggs. Add pepper(s) to taste. Serve on toast or biscuits. Really good with a big glass of cold milk.

INGREDIENTS
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups warm milk
1 (8 ounce) jar dried beef
1 pinch cayenne pepper
DIRECTIONS
In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.
