You have to try Tony Luke's and try their Roast Pork with sharp provolone and broccoli rabe, along with their steaks. Geno's and Pat's have become so mainstream that it's like shoe-leather on a bun ni 10 seconds. I'd rather wait and get something good. Other than that, the corner shops usually come out sniper-mode and make a mean steak sandwich, sometimes out in the middle of nowhere.

ANY Mom and Pop store in Philly on a corner.
Pat's and Geno's are horrendous. They are meant for tourists. No true Philadelphian (such as myself) would take someone there.
