3 ounces gin or vodka
light dash of dry Vermouth
No mango juice

Pour gin or vodka into a shaker of ice. Swirl gently DO NOT SHAKE
Strain into martini glass
slowly add a drop of Vermouth (for aroma only)
garnish with a cocktail olive or twist of lemon

Contrary to popular James Bond folklore, martinis should never be shaken. Shaking bruises the gin with aeration and ruins the martini. A martini should be gently stirred once.

Professional bartenders know that martini and Manhattan drinkers are the fussiest patrons in the world. Pouring a proper martini or Manhattan is an art form.

If any fruit juice is added to a martini, it is no longer a true martini. It becomes a mixed cocktail or tropical drink.

FROZEN MANGO MARTINI
This Martini from Red Light is blended with ice, which makes it similar in texture to a daiquiri. The bartender garnishes it with skewered berries for a nice touch.
1/2 cup sugar
1/2 cup water
1 1 1/4-inch-long piece fresh ginger (about 1 inch in diameter), sliced

2 medium mangoes, peeled, pitted
1/2 cup vodka
20 ice cubes

Combine sugar, 1/2 cup water and ginger in heavy small saucepan. Stir over medium heat until sugar dissolves. Simmer 5 minutes. Remove from heat. Cover; let steep 1 hour. Strain ginger syrup. Cool. (Can be made 1 day ahead. Cover; chill.)

Puree mangoes in blender. Pour into measuring cup. Return 3/4 cup puree to blender (reserve any remaining puree for another use). Add 1/2 cup ginger syrup (reserve any remaining syrup for another use), vodka and ice cubes to mango puree in blender. Blend until smooth.
