canola oil? vegetable oil? corn oil?
especially for deep frying?

Extra Virgin Olive Oil.

It has almost no taste so you can season the food and not worry about the extra "flavor" like some oils have coming through.

It is low in the bad fats and actually good for you.

It is expensive but it is worth the price.

Canola is light and doesn't leave the unpleasant greasy feel in the mouth. Corn oil also works fine. Vegetable Oil may be cheaper because it is actually a mixture of any of the above oils (mill overruns?).

For deep frying, canola works well. We are using it in our hotel. It has a high smoking point (Oil is said to reach its smoking point when it begins to emit smoke, and many oils have a flash point very close to the smoking point, meaning that the oil can potentially catch fire) and the flavor is neutral.

I'm here to tell you right this minute it don't matter one way or the other if you're talking south indian, asian, chinese, mandarin, or jibberish, if you put canola oil in your car, you're gonna fry your engine in a hurry. If you brought that kind of trash into my shop, I would tell you to get out before i said some stuff i could never take back in a million years. The only oil you should ever use is Valvoline - that's a fact, and if you try putting corn oil in....well that's your own damn fault.

For asian cuisine in general, sesame oil and peanut oil are both ideal. For indian cuisine, they use a lot of ghee or clarified butter, but it would not be good for deep frying. Peanut oil is good for deep frying, and sesame should be too. Otherwise canola or corn oil would be just fine and are the most common oils used for deep frying.

For frying, I would use Peanut oil. Its not so easy to find these days because it spoils easy. Canola is good for frying and general purpose, but I avoids it because its genetically modified. Both are realitively healthy. Vegetable and corn is ik for frying, but its not so healthy. You can't deep fry with olive oil, because of its low smoking point, except for low temperature frying for oily fish. It's a mediteranian thing, not Indian, so I wouldn't even think about it. The most appropriate oil for Indian cuisine is sesame seed oil. It's expensive now. My favorite for general purpose is grapeseed oil. I also heard about rice bran oil. Both are good for you but can be hard to find. Peanut , olive and sesame has flavor.

Vegetable oil makes everything tast like fish. Canola oil is bad for you, so I would say corn oil.

Canola Oil is the best for frying fish!I'm from down south and that's what we use for cooking.

I guess corn oil is the best - coz it gives you less oily feel after the food is fried.

PEANUT OIL IT MAY COST MORE BUT THE FOOD WILL TASTE ALOT BETTER AND YOU FRY ALOT MORE WITH IT THEN OTHER OILS
