To my knowledge it's fine, but a friend was telling me it breaks down the surface. Is that true? Thanks.

Mya, I have been cooking for over 35 years. I have never had a problem with butter or margerine in a non-stick pan, breaking it down. Watch your heat setting so you don't burn the butter/margerine. Scratching the surface of the pan is a different story though.

Use the instructions provided for your cookware or call the manufacturer if you are in doubt.

I'm pretty sure it doesn't; I have used this method of cooking for many years and my skillets last a long time as long as you wash them without scrubbing and check the manufacturer directions.

Just don't get the pan too hot, and you'll be fine.

i think it's ok, too. i know that using non-stick sprays like Pam leaves a weird coating on non-stick pans that doesn't really come off...
