I don't think he will hold any ill will because you want to try a different style. I have had students do that and the one thing is that I will always leave the door open if they want to come back. When and if they do, I try to start them right back where they left off, instead of starting all over again. That in itself may detere them from not coming back if they don't like the other style. They will need to brush up on alot of things, but in general, they remember some of the things that they left behind. Good luck on your new style you want to try. He will understand.

Thank him for his wisdom and perhaps ask him for advice as to what other art will compliment what you have learned. Perhaps your Sensei is associated with another school. Do understand though that this is also a business matter. You are a customer and are taking your business elsewhere. But if things are on good terms you should be able to return if you should ever decide to continue your studies in your first art.

Tell him the truth. Your sensai should understand that you want to explore other arts. If he doesn't then best leave that dojo, and don't look back.

You tell your Sensai with; Respect, honesty and courtesy that you are wanting to broaden your abilities. I'm sure he will understand, and hope to see you back when you realize his is the best school for you.

Be honest in what you are doing. He should understand and encourage such things.
Being dishonest to Sensei is bad.

What kind of a relationship do you have with your Sensei? The respectfull thing to do is to go & talk to him & tell him honestly why you are leaving his school.
