I belive this project is made to make your 4th grader reflect about the growth-conditions of mould.
mould and yeatst are two quite different fungus types.
Mould requests oxygene and humidity. Bread products with sugar, fine flour who has been frozen (so that there is free water drops inside the plastic bag) and is stored in room temperature will often mould over night.
IF there is mould spores present inside the bag.
Mould spores is nearly everywere so it often is.
NB. the ryebread (if its dark) makes it hard to see the first mould colonies. And it smells naturally somehow mouldy/ yeastlike.
