I just bought a new HDTV (Plasma) and I have a perfectly good DVD player (although it is 5 years old). Are the upconvert players worth it as far as image quality goes? Also, what kind of cables do you need to use with them? Are old-fashioned RCA cables good enough, or do you need HDMI?

If your tv can display a resolution of 1080, then you're ok with the upconvert player. You won't see lot of difference because the player only convert a dvd, with a resolution of 480p, to 1080. To get the best possible pictures you would need a HD dvds since they were mastered at the resolution of 1080. But here's the deal, in order to views hd dvds you'll need a HD-DVD player or a Blu-Ray player. Don't use RCA (composite) cables if you want the best picture. Use either component cables (extra Red/Green/Blue connector) or HDMI.

If you get a good one, I really like the Samsung, and you use the HDMI cable to get your picture it will be well worth your investment. The picture will not be as good as the very best HDTV picture but it will be very close and better than what you have.
