The "Chip" in the UK was invented in Yorkshire in the 1700s where it is believed that the potato was cut into the particular shape and much thicker than french fries- so that they may be lined up between two pieces of bread to make the well known Chip Butty.

The chip it a piece of potatoe chipped off as you would chip off a piece of wood from a tree trunk for fire wood.

Because chips are small parts of a whole for example, chips of wood are small bits of wood that have been chipped off of a larger piece of wood.

The first part of your question "why are they called chips" is almost logical, but the second part " why are chips called chips" is very illogical, it is like asking why are cars called cars or why are houses called houses. What do you expect chips to be called? garden sheds perhaps, or rhinoceroses or upside down pillar boxes?

Because they are 'chipped' off of the potato. They originated from upstate NY. A man at a diner complained that the potatoes were cut too think, so the owner, who was miffed, grabbed the potatoes, cut them as thinly as possibly, threw them in the oil, then took them out, salted them and gave them to the patron.
