maranade in honey , olive oil and brandy. It's yummy grilled or baked in the oven. You can even fry it, but it's much more moist after baking in tin foil.

I would definately try frying the salmon, however if any guests have High cholesterol I would leave out this option. My mother usually fries a ceryain fish in a rich thick soya Sauce and then adds glazed sweet white onions. I just love this an we eat it with rice. happy Birthday to your little boy!

For a big fish, we bbq it, put it on the grill skin side down and DO NOT TURN IT. Baste it with a mix of brown sugar, butter and liquid smoke. It comes out awesome.
Usually we broil our salmon steaks. Coat each side with mayo, lemon pepper, garlic powder, dill, salt, and you will need to turn it over. This is quite yummy also.

Sun-Dried Tomato Cedar-Planked Salmon
(& Lemon Lime Rice)
Serving Size : 8
*Note: Salmon can also be grilled on a sheet of foil instead of the cedar plank
*1 untreated cedar plank (14x7x1 inch)
1/2 cup Sun-Dried Tomato Vinaigrette Dressing (You can probably find this in the salad dressing aisle)
1/4 cup finely chopped fresh parsley
1/4 cup finely chopped sun-dried tomatoes
1 Tbsp. vegetable oil
1 salmon fillet (2 lb.), 1 inch thick, skin removed
IMMERSE the plank in water, placing a weight on top of the plank to keep it submerged. Soak at least 4 hours or overnight.
PREHEAT the grill to medium heat. Mix dressing, parsley and tomatoes; set aside.
BRUSH top of cedar plank with oil; top with salmon. Place on grill; cover grill with lid. GRILL 10 minutes. Brush with dressing mixture; continue grilling 10 minutes or until salmon flakes easily with fork.
UNTREATED cedar planks, which are sold for this purpose, can be found at most specialty food stores or some grocery stores. During cooking, check periodically to make sure the plank is not on fire. Since the plank can ignite when exposed to flames, it is best to keep a spray bottle of water close at hand if needed to extinguish any flames.
Lemon and Lime Rice
4 servings
2 cups Minute White Rice, uncooked
1 Tbsp. butter or margarine
1 Tbsp. chopped fresh cilantro
1-1/2 tsp. grated lemon peel
1-1/2 tsp. grated lime peel
1/2 tsp. salt
COOK rice as directed on package. ADD butter; stir until melted. Add remaining ingredients; mix lightly. Serve warm.
Great Substitute: Substitute 1 Tbsp. grated orange peel for 1-1/2 tsp. each of the grated lemon and lime peels.

I often simply put some freshly-squeezed lemon on the fish, along with bread crumbs, seasoning salt, and fresh herbs (any kind you prefer) sprinkled on top. It's simple, with a nice tangy flavor (from the lemon) and it's so easy to make. Try it out!

In the superstore, fruits are usually selected far too soon. Some are rocks, many are wrong. Some of the fruit and vegetables are right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.

Baked Citrus-Herb Salmon:
Ask your fishmonger to remove the pin bones from the salmon. This dish is delicious served hot or at room temperature. It will feed a crowd, and you can toss the leftovers with pasta or salad.
Cooking spray
1 (3 1/2-pound) salmon fillet
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 tablespoons grated lemon rind
1 tablespoon grated orange rind
10 fresh chives
4 thyme sprigs
4 oregano sprigs
4 tarragon sprigs
10 (1/8-inch-thick) slices lemon (about 1 lemon)
Preheat oven to 450°.
Line a shallow roasting pan with foil; coat foil with cooking spray.
Sprinkle salmon with salt and pepper. Combine rinds; spread over fish. Arrange chives, thyme, oregano, and tarragon horizontally across fish. Arrange lemon slices on top of herbs.
Place fish on prepared pan. Cover with foil; seal. Bake at 450° for 30 minutes or until fish flakes easily when tested with a fork. Serve warm or at room temperature.
Yield: 10 servings (serving size: about 4 ounces salmon)
