I love ground turkey, its so lean and moist, but i'm running out of ideas - i've done meatloaf, spaghetti and meatballs, hamburger helper things and burgers - any other suggestions?

turkey chili
INGREDIENTS
1 1/2 pounds ground turkey
1 green bell pepper, chopped
1 (19 ounce) can black beans, with liquid
1 (28 ounce) can diced tomatoes, with liquid
1 (15.25 ounce) can whole kernel corn, with liquid
1 pinch ground cumin, or to taste
1 pinch chili powder, or to taste
1 pinch red pepper flakes, or to taste
1 pinch ground cinnamon, or to taste
DIRECTIONS
Place turkey and bell pepper in a large saucepan over medium heat, and cook until turkey is evenly brown. Mix in beans, tomatoes, and corn. Season with cumin, chili powder, red pepper flakes, and cinnamon. Bring to a boil, reduce heat to low, and simmer 30 minutes. Add water if you want a more liquid chili.


Thanksgiving Meatloaf
INGREDIENTS
2 1/2 pounds ground turkey
1 1/2 cups chicken-flavor stuffing mix
2 eggs
1/3 cup milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Mix together turkey, stuffing, eggs, and milk in a large bowl. Mixture will be lumpy. Spread mixture in 9x5 inch loaf pan.
Bake for 1 hour until temperature reads 165 degrees F in center of loaf.

Turkey Bolognese Sauce
INGREDIENTS
2 pounds ground turkey
2 onions, minced
4 cloves garlic, minced
3/4 cup grated carrots
1 1/2 teaspoons dried basil
2 tablespoons minced jalapeno peppers
1 cup milk
1 1/2 cups white wine
2 (28 ounce) cans whole peeled tomatoes
1 tablespoon tomato paste
1 pound spaghetti
1/2 cup grated Parmesan cheese
DIRECTIONS
In large saucepan over medium heat, cook turkey, onion, garlic, carrot, basil and jalapeno until turkey is brown. Pour in milk, reduce heat to low, and simmer until reduced by one-third. Stir in wine and reduce again. Pour in tomatoes and tomato paste and simmer 3 hours more.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss with tomato sauce and top with Parmesan. Serve.

This homemade version is light years ahead of anything you can buy in an envelope or can, and really just as easy. I like to serve these with paper-thin slices of red onion. Ingredients 1 teaspoon vegetable oil 1 lb. ground beef or ground turkey 1 medium yellow onion, peeled and chopped fine 1/2 cup best-quality ketchup 1/2 cup best-quality chili sauce 2 tablespoons Worcestershire sauce 1 teaspoon coarse salt freshly cracked black pepper 1/3 cup water 6 sesame seed topped hamburger buns, warmed Method Brush a skillet with oil and warm over moderate heat, 30 seconds. Add beef [or turkey] and onion and sauté 10 minutes, stirring frequently. Add all remaining ingredients [except buns] and simmer, uncovered, 10 minutes. Spoon mixture between split buns and serve immediately.

GROUND TURKEY GOULASH

12 oz. cooked ground turkey (1 lb. raw)
4 c. canned tomatoes, finely chopped
1/2 c. chopped green pepper
1 tbsp. instant minced onion
1 (4 oz.) can mushroom pieces with liquid (optional)
2 packets beef or chicken bouillon
3 oz. elbow macaroni, uncooked
Salt, pepper, onion powder and garlic powder to taste

Place cooked ground turkey (or 1 pound uncooked and browned) in a nonstick skillet with seasonings. Add tomatoes, green pepper, onion, mushrooms with liquid and bouillon; bring to a boil. Add macaroni (do not stir in) and continue to boil, uncovered, until macaroni absorbs all of the liquid and is tender, about 20 minutes.

Ground Turkey Chili:

1 tablespoon olive oil
2 1/2 cups chopped onion
4 garlic cloves, minced
1 pound ground turkey breast
1 1/2 cups water
1 tablespoon chili powder (such as Mexene)
1/4 teaspoon black pepper
1 (16-ounce) can kidney beans, drained and rinsed
1 (15.5-ounce) can small red beans, drained and rinsed
1 (15-ounce) can tomato sauce
1 (14.5-ounce) can whole tomatoes, undrained and coarsely chopped
3/4 cup light beer
1/3 cup hot brewed coffee

Heat oil in a Dutch oven over medium-high heat. Add chopped onion and garlic; sauté 3 minutes. Add ground turkey; cook 6 minutes, stirring to crumble. Stir in water and next 6 ingredients (water through tomatoes), and bring to a boil. Reduce heat; simmer, uncovered, 45 minutes, stirring occasionally. Stir in beer and coffee; simmer 10 minutes, stirring occasionally.

Yield: 6 servings (serving size: 1 1/3 cups)

The-Perfect-Present.com Turkey Meatloaf Recipe


This meatloaf recipe is nothing fancy but it's one of my favorite ground turkey recipes. It's just delicious. I give you the ingredients for three different sizes. We usually make the 3 lb. size because people tend to eat a lot. 1 lb. 2 lbs. 3 lbs.
Preheat the oven to 350°F.
Ground Turkey
(I prefer Shadybrook Farms) 1 lb. 2 lbs. 3 lbs.
Eggs (Large) 1 2 3
Hot sauce. I use a mild hot sauce. My favorite is a brand called Sharkey's (scroll down for picture) but it can be a little hard to find. If you are using regular hot sauce you might want to cut this back by at least half. This is especially true if you are serving the meat loaf to children. You can always add more to taste later. 1 tbsp. 2 tbsp. 3 tbsp.
Worcestershire Sauce
(I use Lea and Perrins) 1 tbsp. 2 tbsp. 3 tbsp.
Adobe Seasoning (Scroll down for picture) 1 tsp. 2 tsp. 3 tsp.
Vidalia Onion - Diced 4 ozs. 8 ozs. 12 ozs.
Extra Virgin Olive Oil (EVOO) 1 tbsp. 2 tbsp. 3 tbsp.
Bread - either white or whole wheat 2 slices 4 slices 6 slices
Put the ground turkey and all other ingredients except the bread slices into a large bowl.
Wet the slices of bread with water and then gently squeeze out the excess. Then pinch small pieces placing them in the bowl. It is not necessary to remove the crust. This is the secret to an unbelievably moist meatloaf!
Mix thoroughly.
Place mixture in appropriate size baking dish.
It's difficult to say precisely how long to bake your meatloaf since it depends on the dish you're using, your ovens characteristics, etc. I bake the 3 lb. meatloaf, covered, for 1½ hours and then check to see if it's done. You want it to be done but don't overcook it. You want it to be moist.
Remove from oven and let stand for about twenty minutes.



Barbecue Bean Stew
Barbecue Bean Stew

1 large can (28 ounces) barbecue beans
1/2 to 1 pound ground turkey or ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper (1 medium pepper)
1/2 cup matchstick carrots, or use frozen or canned
1 can (8 ounces) tomato sauce
1 cup water
1/2 teaspoon garlic powder
1 can (approximately 14.5 ounces) tomatoes, diced
1 cup shredded cheese
Brown ground turkey or ground beef with onion and green bell pepper; combine with remaining ingredients in crockpot or slow cooker.
Cover and cook on low 6 to 9 hours. Serve with a sprinkling of grated cheese and cornbread or crackers.
Stovetop: Brown ground turkey or ground beef with onion and green bell pepper; combine ingredients in a stockpot or Dutch oven. Cover and simmer for 45 minutes to 1 hour.

Note: Cooking time can be shortened by using frozen or canned diced carrots.
Serves 4 to 6.

Crockpot Taco Soup Recipe
INGREDIENTS:
1 to 1 1/2 pounds ground round or turkey
1 med to large onion chopped
2 tbsp. oil
1 can corn-undrained
1 can black beans-undrained
1 can kidney beans-udrained
2 cans chopped tomatoes with chiles
1 can tomato sauce (regular size)
1 envelope taco seasoning
PREPARATION:
Add chopped onion to hot oil in fry pan. Cook until tender; add ground meat and cook until no longer pink. Drain well and transfer to crockpot. Add corn, black beans, kidney beans, tomatoes, tomato sauce, and taco seasoning; stir well.
Cook on low for four to six hours. When serving, top soup with broken taco chips and shredded cheddar cheese. Enjoy!!!
Serves 6 to 8.

Turkey Porcupines
Porcupines are meatballs which contain rice. The rice cooks along with the meat in a savory tomato sauce. Serve this delicious main dish over more cooked rice.
INGREDIENTS:
1 lb. ground turkey
1/2 cup uncooked long grain rice
1 onion, finely chopped
1 Tbsp. olive oil
1/2 tsp. salt
1/8 tsp. pepper
1 Tbsp. olive oil
1 Tbsp. butter
2 tsp. sugar
1/2 tsp. dried basil leaves
1/2 tsp. dried thyme leaves
1 cup water
2 (8 oz.) cans tomato sauce
PREPARATION:
Cook onion in 1 Tbsp. olive oil until tender; let cool for 15 minutes. In large bowl, combine ground turkey, uncooked rice, cooked onion, salt and pepper and blend well. Shape into 16 meatballs.
In large skillet, heat olive oil and add meatballs.

Brown carefully, turning gently to cook evenly. Sprinkle sugar, basil, and thyme over meatballs, then pour over water and the two cans of tomato sauce. Bring to a boil, then reduce heat, cover and simmer for 40-50 minutes until turkey is thoroughly cooked, stirring occasionally. 4 servings

Low-Fat Stuffed Cabbage Recipe
Ingredients
8 medium or 16 small cabbage leaves
1 cup water
1/4 cup raisins
1/2 cup minced onion
1 teaspoon minced garlic
1 pound lean ground turkey
2 teaspoons ground cumin
Grated rind of 2 lemons
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
2 large tomatoes, diced or cut into thin wedges
2 tablespoons minced fresh parsley or basil


Instructions
Blanch the cabbage leaves in boiling water for 1 minute. Remove with a slotted spoon. Lay the leaves flat on a tray and set them aside. In a 1-quart saucepan over medium heat, bring the water and raisins to a boil. Set aside. In a large non-stick frying pan over medium heat, combine the onions, garlic and 2 teaspoons of the water from the raisins.Ê Saute until the onions turn translucent, about 5 minutes. Add the turkey. Saute, stirring constantly, until the meat has lost its color and is well broken up.

Drain the raisins, discarding the water. Add to the turkey. Add the cumin and lemon rind. Saute for 5 minutes. Stir in the pepper and thyme. Remove from the heat and allow to cool.Ê Divide the filling among the cabbage leaves. Enclose the filling by tucking in the side edges and rolling up the leaves. Coat a 9- x 13-inch baking dish with non stick spray. Add the rolls, seam side down. Bake at 350 degrees F. for 15 minutes.

Sprinkle the tomatoes with the parsley or basil. Serve with the cabbage.

Yield: 6 to 8 servings
