Coconut Macaroons

1 can condensed milk
2/3 of a (14oz) bag of shredded coconut
1 tsp of almond or vanilla extract

Mix and shape into 1 tbsp. balls. Bake on ungreased sheet or parchment paper for about 10 minutes.

Melted chocolate bark can be drizzeled over if desired.

Soooo easy and moist. Foolproof!

I tried this recipe this past Christmas and it is my friends and familys new favorite! What a huge hit everywhere I took them! I used vanilla instead of the brandy

White Chocolate and Cranberry Cookies
"I make a basic chocolate chip cookie dough, but use white chocolate chips, dried cranberries, and brandy (instead of vanilla).

INGREDIENTS
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tablespoon brandy
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 cup white chocolate chips
1 cup dried cranberries
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

I just made them the other night. They are oatmeal chocolate peanut butter no bakes. Super easy and very yummy!

Chocolate Oatmeal Cookies:

2 C. Sugar
1/2 C. Milk
4 Tbsp. cocoa
1/2 C. butter
1 tsp. vanilla
2/3 C. Creamy peanut butter
3 C. regular oatmeal

Bring the sugar, milk, cocoa, and butter to a full boil and let boil for 1 minute. Then add vanilla and creamy peanut butter. Mix quickly until well blended. Remove from heat and mix in oatmeal 1 cup at a time. Drop by TBSP full on wax paper or tin foil. Let dry for about 15 or 20 minutes and ENJOY!

You won't believe how amazing these are!!! Try them! They're great!

Cookie Ingredients:
1 cup of water
1 tsp. baking soda
1 cup of sugar
2-1/2 cups flour
1 tsp. salt
1 cup of brown sugar
1 tsp. lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequila

Sample the Cuervo to check quality. Take a large bowl, check the Cuervo again, to be sure it is of the highest quality, pour one level cup and drink.
Turn on the electric mixer...Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar...Beat again.
At this point it's best to make sure the Cuervo is still OK, try another cup .. just in case.
Turn off the mixerer thingy. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit. Pick the frigging fruit off floor...
Mix on the turner. If the fried druit gets stuck in the beaterers, just pry it loose with a drewscriver.
Sample the Cuervo to check for tonsisticity. Next, sift two cups of salt, or something. Who giveshz a sheet.
Check the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink.
Whatever you can find. Greash the oven. Turn the cake tin 360 degrees and try not to fall over.
Don't forget to beat off the turner. Finally, throw the bowl through the window, finish the Cose Juervo and make sure to put the stove in the dishwasher.

Energy cookies (protein boosted)

1/2cup chunchy peanut butter
1/2cup liquid honey
1 tablespoon vegetable oil
1 large ripe banana,mashed
1 cup wheat bran
2 cups rolled oats
1/4 cup wheatgerm
1/2 cup apricots,finely chopped
1/4 cup sunflower seeds
2 teaspoons lemon zest,finely chopped
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cardamon

Preheat oven 200 degree
place honey, peanut butter and oil in a small saucepan,over medium heat,stir with a wooden spoon until mixture becomes liquid.Take saucepan off the heat and beat in the banana set aside.
In large bowl combine all the remain ingredients stir in the sticky mixture until well combined.
Drop spoonfuls of the dough onto a baking sheet, and press each cookie down firmly with palm of your hand.
bake for 20 minutes or until gold brown.Store in airtight container

Spice Cookies Recipe

2/3 cup (160 ml) dark corn syrup
1/2 cup (108 grams) firmly packed light brown sugar
1/2 cup (113 grams) unsalted butter
3/4 cup (100 grams) whole blanched (skinned) almonds
2 cups (280 grams) all-purpose flour, sifted
1/4 teaspoon baking soda
1/2 teaspoon ground allspice
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon finely ground black or white pepper
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract
Finely grated zest of 1 large lemon

Place the corn syrup, sugar, and butter in a large saucepan (6 cup capacity). Place over medium heat and bring to a boil, stirring frequently. Let the mixture boil for about 2 minutes, then remove from heat and set aside to cool.

Meanwhile preheat the oven to 350 degrees F (177 degrees C) and place the rack in the middle of the oven. Toast the almonds for about 8-10 minutes, or until the nuts are lightly colored and fragrant. Set aside to cool.

In a medium sized bowl sift, or whisk, the flour, baking soda, allspice, ginger, cinnamon, salt and pepper Set aside.

Remove about 20 of the toasted almonds and chop them into small pieces. Set aside to use as garnish for the cookies.

Place the remainder of the almonds in a food processor, fitted with a metal blade. Add about 1/4 cup of the sifted dry ingredients and process for about 30 seconds or until finely ground. Place the finely ground nut mixture and dry ingredients in a large bowl and stir to combine.

When the corn syrup cools to tepid, stir in the vanilla extract, almond extract, and lemon rind. Add this mixture to the dry ingredients and stir to combine.

Divide the dough in half and wrap each half in plastic wrap. Refrigerate for about an hour or until the dough is firm enough to roll out.

Preheat oven to 375 degrees F (190 degrees C) and line two baking sheets with parchment paper.

On a lightly floured surface, roll the dough to a thickness of l/8 inch. Use a 3 inch (8 cm) round cookie cutter to cut out the cookies. Transfer cookies to the baking sheet, spacing about 2 inches (5 cm) apart, and sprinkle with chopped almonds.

Bake for 8 to 10 minutes or until lightly colored. Do not over bake or they will be too hard. Cool cookies on wire racks and then store in an airtight container.

PB & Chocolate Pan Cookie:

Prep: 10 min., Bake: 20 min., Stand: 5 min. Leave the mixer in the cabinet--you can mix up this dough with a spoon.

3/4 cup chunky peanut butter
2 large eggs
1 teaspoon vanilla extract
1 cup firmly packed light brown sugar
2 cups all-purpose baking mix
1 (12-ounce) package dark chocolate morsels, divided

Stir together peanut butter, eggs, and vanilla in large bowl.

Stir in brown sugar until combined. Add baking mix and 3/4 cup dark chocolate morsels, stirring just until moistened. Spread mixture in a lightly greased 15- x 10-inch jelly-roll pan.

Bake at 325° for 20 minutes or until golden brown. Remove from oven, and sprinkle evenly with remaining 1 1/4 cups dark chocolate morsels; let stand 5 minutes or until chocolate melts. Spread melted chocolate evenly over top. Cut into triangles, bars, or squares.

Yield: Makes about 24 pieces

For chocolate chip cookies I like to use the one on the package of Nestle morsels.
