I have layered hair and I can straighten it to look choppy, but it
always flattens in a matter of hours.

How can I get my hair to look and stay choppy?

Get hair mud, or styling wax. You can it it at a salon or even WalMart so it's not too hard to find or too expensive

Defiantly get a razor cut. A good hair glue helps too.

Use a razor when you get a haircut. Redken Rewind is a great product to give your hair more texture.

okay you want to take a piece of your hair and twist it

then take a razor and go down one side and let it uncoil and repeat this alll the way around your head
